Lamb should be served rare or medium rare....make sure the lamb is at room temp for 3 hrs, rub with oil and put in a 500 degree oven for 3 min per pound (bake not broil setting. When the 12 minutes has expired, shut the oven off but DO NOT OPEN THE DOOR for at least and hour and 1/2, it will continue cooking at lower temps and leave you with a perfectly medium rare lamb.
