Good that the meat is rare. Yes you can keep it juicy, crispy and medium. Let rack sit out for about an hour for it to reach room temp. Place rack fat side down on a hot stove top skillet on high flame for two minutes, this will allow for the crispiness. Turn rack fat side up place in a hot 400 deg. oven for another 8-12 minutes. Remove from oven let rest for 5-10 minutes to allow juices to redistribute though the meat.Joan Said:

MUSHROOMS ALFREDO1 pkg. Gourmet Stuffing mushrooms
3 or 4 green onions
2 tbsp. butter
1 pkg. Knorr Alfredo mix
1 lb. fresh crab meat or 1/2 lb. imitation crab meat
Remove stems from mushrooms. Discard stems. Prepare Alfredo sauce as directed. Chop green onions and saute in butter. Add crab meat to onion and butter. Preheat oven to 350 degrees. Combine in bowl crab meat mixture and Alfredo sauce. Stuff mushrooms with mixture. Place mushrooms in buttered Pyrex dish. Bake for 45 minutes at 350 degrees. For crispy coating on top, after cooked place in broiler for a few minutes.
If you wish about 5 minutes before done, sprinkle with Parmesan or Romano cheese.

There are a number of Jewel Stores in that area, as I remember. You could call to see if they carry lamb.
