It's a matter of taste.We use chicken fat in many recipes in this country.
In France they use Duck fat and Goose fat( which I think is horrendous).
So, just like people love chicken and hate pork and lamb,
the same holds true for the fat.

Bear, Beef, Lamb, Pork, Sausage, Veal, Venison
Procedure: Choose fresh, chilled meat. With venison, add one part high-quality pork fat to three or four parts venison before grinding. Use freshly made sausage, seasoned with salt and cayenne pepper (sage may cause a bitter off-flavor). Shape chopped meat into patties or balls or cut cased sausage into 3- to 4-inch links. Cook until lightly browned. Ground meat may be sauteed without shaping. Remove excess fat. Fill jars with pieces. Add boiling meat broth, tomato juice, or water, leaving 1-inch headspace. Add 2 teaspoons of salt per quart to the jars, if desired.
Adjust lids and process following the recommendations in Table 1 and Table 2 according to the canning method used.

If you like curry, you can make a lovely spinach, potato & lamb curry with minced lamb.Basically boil some new potatoes and set them to one side, then fry up some sliced red onions (use a very small amount of oil or fry-light 1 calorie spray oil) add the mince and some freshly grated ginger and stirfry until cooked, then add curry powder (balti curry powder works best for this receipe) and seasoning. Then add the boiled new potatoes and spinach leaves, and stir in until the spinach has wilted. (baby spinach leaves are best if possible). Cook for a few more minutes, then serve with rice, drizzle with low-fat natural yogurt and sprinkle with chopped fresh coriander if you like it.

Depends. Fat is not the only criteria here. What cut of pork does the recipe call for, and what cut of lamb do you want to use? How is it to be cooked? Tough cuts like shoulder or shanks you might be able to sub one for the other, but pork chops and lamb chops require different techniques. You certainly could not sub leg of lamb for pork tenderloin.
