Low-Fat Lasagna

10 ounce lasagna noodles, cooked
1/2 pounds beef, ground, extra lean, ground turkey may be used
8 ounces mushrooms, can, pieces, drained
1 each onion, chopped
30 ounce spaghetti sauce, low-fat
2 each carrots, peeled, shredded
16 ounce cottage cheese, fat-free
8 ounces mozzarella cheese, part skim, shredded

Cook lasagna noodles; drain & set aside. In skillet or fry pan, cook meat; drain fat & place meat in colander. Rinse with hot water. Add mushrooms & onion to cooked meat.

In a 9x13x2 inch baking pan, layer one-third of cooked lasagna noodles with half the meat mixture, half cottage cheese, half carrots, half mozzarella & one third sauce. Repeat layers. Top with remaining noodles & sauce. Cook uncovered for 35 minutes at 350 degrees. Remove from oven; cover with foil. Let stand 20 minutes before serving.

1 pound of sweet Italian sausage
1 pound of ground beef
1/2 cup of chopped onions
2 cloves of garlic chopped
1 (28 ounces) can of crushed tomatoes
2 (8 ounces) cans of tomato sauce
2 (6 ounce) cans of tomato paste
1/2 Cup of Water
2 tablespoons white sugar
1 teaspoon fennel seed
2 teaspoons fresh Basil leaves chopped
4 tablespoons fresh Italian parsley chopped
1 teaspoon salt
1 teaspoon Italian Seasoning
1/2 teaspoon ground pepper
23 ounces of ricotta cheese.
1/2 teaspoon fresh grated nutmeg
1 egg
1 pound shredded mozzarella cheese
1 cup grated Parmesan cheese

1. Start with the following in a pot.

1 pound of sweet Italian sausage
1 pound of ground beef
1/2 cup of chopped onions
2 cloves of garlic chopped

Brown the ground beef, Italian sausage, onions & garlic in a pot until they start to look. It takes about 6 to 9 minutes to brown the meat. I like to use a Dutch oven to cook this portion of the recipe. I use a medium low temperature to brown the meat. It is optional to remove the grease from the meat once it is finished browning, your choice.

2. Add the following:

1 (28 ounces) can of crushed tomatoes
2 (8 ounces) cans of tomato sauce
2 (6 ounce) cans of tomato paste
1/2 cup of water

Gently stir this into the cooking meat.

3. Add the following:

2 tablespoons white sugar
1 teaspoon fennel seed
2 teaspoons fresh Basil leaves chopped
2 tablespoons fresh Italian parsley chopped
1 teaspoon salt
1 teaspoon Italian Seasoning
1/2 teaspoon ground pepper

Gently stir these seasoning into the sauce. Cover the pot & let the meat sauce simmer. Simmer on low heat for 1 hour & 30 minutes

4. Soak 12 lasagna noodles.

The lasagna noodles need to be soaked in hot tap water for 15 minutes.

5. While the noodles are soaking you can make the cheese filling.

Put the following in a mixing bowl:

23 ounces of ricotta cheese.
1/2 teaspoon fresh grated nutmeg

Grate fresh nutmeg over the Ricotta cheese.

6. Add the following

1 egg
2 tablespoons fresh Italian parsley chopped

Mix these ingredients together with a spoon

7. Now we start building the lasagna layers. Use a 9×13 inch baking pan. Spread 2 Cups of meat sauce on the bottom of the pan. Remove your lasagna noodles out of the water bath. Shake water off wet noodles. Lay 6 noodles across the layer of sauce. Spread half of the ricotta cheese mixture over the layer of noodles. Spread 1/2 of the mozzarella cheese over the ricotta layer. Sprinkle half of the Parmesan cheese over the mozzarella layer. Spread 2 cups of meat sauce over the cheese layer. Lay down the next layer of noodles. Spread the remaining ricotta mixture over noodles. Spread the mozzarella & Parmesan cheeses saving some cheese for the top of the lasagna. Put the last layer of meat sauce on the cheeses. Sprinkle the remaining cheese on top.

8. Cover with foil

Bake in preheated oven at 350 for 25 minutes. Remove foil & bake uncovered for another 25 minutes. Remove from oven & allow to cool for approximately 15 minutes.

Serves 4
Ingredients

* 2 tbsp olive oil
* ½ large onion, peeled
* 1 large carrot, peeled
* 2 cloves garlic, peeled
* 2 pinches dried oregano
* 300g minced beef
* 1 tbsp tomato purée
* 1 tbsp Worcestershire sauce
* 1 bay leaf
* 30ml (2 tbsp) red wine
* 1 x 400g tin chopped tomatoes
* 50ml milk
* Salt and freshly ground black pepper

For the sauce

* 25g butter
* 25g flour
* 300ml milk
* Pinch of ground nutmeg
* 60g Cheddar cheese, grated
* 30g Parmesan cheese, grated
* 6 sheets of 'non-cook' lasagne sheets

For the salad

* 1 tsp Dijon mustard
* 1 tbsp white wine vinegar
* 2-3 tbsp olive oil
* Salt and pepper
* 1 x round lettuce head, rinsed and dried

Method:

1. Pre-heat the oven to 225°C.

2. Heat the olive oil in a hot pan. Grate the onion and carrot and crush the garlic before frying together. Season with the bay leaf, a pinch of oregano, Worcestershire sauce and a little salt and pepper. Allow the onion to soften before making a well in the centre of the pan. Place the mince in the middle of the pan and stir to break it up. Add the tomato puree and allow to cook out for 30 seconds. Continue until all the meat has browned nicely. Add the wine and cook off the alcohol before adding the tomatoes. Leave to simmer for a further 2-3 minutes. Finally add the milk, turn off the heat and set aside.

3. To make the cheese sauce, first melt the butter in a saucepan. Add the flour and using a wooden spoon, stir to form a paste. Over a gentle heat add a third of the milk, whisking to prevent any lumps forming. Add the rest of the milk a third at a time, whisking as you go. Season with salt and pepper and a pinch of ground nutmeg. Allow the sauce to cook out for another minute before adding the Cheddar cheese. Stir and remove from the heat.

4. Spoon half of the meat sauce into the bottom of the baking dish and place pasta sheets on top (break the sheets if necessary to avoid any overlapping). Next, pour in just under half of the cheese sauce, and spread evenly using a spatula before spooning the remaining meat on top. Add the final layer of pasta and use the spatula to pour over the remaining cheese sauce.

5. Finish with the grated Parmesan and sprinkle with another pinch of oregano. Add a light seasoning of salt and pepper before cleaning the edges of the dish and placing in the oven to bake for 20-25 minutes, or until golden brown.

6. In the bottom of your salad bowl use a fork to whisk together the mustard, vinegar and olive oil. Season with salt and pepper. Carefully open the head of lettuce, season inside with salt and pepper. Upend the lettuce headfirst into the salad bowl. Holding the root, wipe the leaves around the bowl to coat in the vinaigrette. Twist the root and pull it out. Turn the dressed head of lettuce onto a large plate and gently open out.

7. Portion out the lasagne and serve alongside the salad.

1 lb. ground beef
3 1/2 c. (32 oz.) thick spaghetti sauce
1 1/2 c. water
2 c. (15 oz.) Ricotta cheese
3 c. (15 oz.) shredded Mozzarella
1/2 c. grated Parmesan cheese
2 eggs
1/4 tsp. salt
1/4 tsp. pepper
8 oz. lasagna, uncooked

Brown beef in 3-quart saucepan; drain off excess fat. Add sauce and water; simmer about 10 minutes. Combine remaining ingredients, except lasagna, for filling. Pour about 1 cup sauce on bottom of 9x13x2-inch baking pan.
Layer 3 pieces of uncooked lasagna over sauce; cover with about 1 1/2 cups sauce. Spread half of cheese filling over sauce. Repeat layers of lasagna, sauce and cheese filling. Top with layer of lasagna and remaining sauce. Cover with aluminum foil and bake at 350 degrees for 50-60 minutes. Remove foil; bake about 10 minutes longer. Allow to stand 10 minutes before cutting.

INGREDIENTS
3/4 pound ground beef
2 packets dry spaghetti sauce mix
1 (1 ounce) package dry mushroom gravy mix
2 (6 ounce) cans tomato paste
4 cups water
2 tablespoons vegetable oil
1 (16 ounce) package lasagna noodles
1 (16 ounce) package mozzarella cheese, shredded
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
In a medium saucepan over medium-high heat, combine spaghetti sauce mix, mushroom gravy mix, tomato paste, water and oil. Bring to a boil and stir in ground beef. Reduce heat and simmer for 20 minutes.
In a 9x13 inch baking dish layer the noodles, sauce and cheese; repeat layers, ending with cheese.
Bake in preheated oven for 20 minutes.

I've been making this for over 30 years - always gets raves!

Lasagna

Get a 2 to 3 jars of spaghetti sauce (Ragu, Prego...), two packages of lasagna noodles, 16 oz of mozzarella cheese, 16 ounces of ricotta cheese, 1 egg, and a pound of ground beef.

Prep:
Cook the lasagna noodles until they are done.
Get a 9 x 13 pan ready.
In a sauce pan fry the ground beef, drain and add the spaghetti sauce and heat.
Mix the egg in with the ricotta cheese, and a little salt and pepper.
Slice or grate the mozzarella cheese.

Assembly:
On the bottom of the pan, put a little of the spaghetti sauce, so the noodles don't stick (or spray with Pam). Then put a layer of the noodles, so you can't see the bottom. Put the length of the noodles going the same direction as the length of the pan. If you have any space at the bottom, put pieces of noodles in to plug the holes. Then put half of the ricotta cheese spread over the noodles, then half the mozzarella cheese, and pour half of the sauce over the cheese, then start over, noodles, ricotta, mozzarella, sauce. Sprinkle the top with Parmesan cheese and bake for 30 minutes at 350 degrees F or until bubbly. Let sit for 15 minutes before serving.

Layer lasagna noodles, Ragu Chunky garden pasta sauce, fried hamburger meat, mozzarella cheese about 2 or three times, depending on the depth of your pan. Bake @ 400 degrees until cheese is melted and slightly golden. Easy & yummy.
