I agree with Katie about baking it for about 30 minutes at 350F and that you should let it rest for about 10 minutes after it comes out of the oven.Did you thoroughly drain/press the tofu to get all the excess water out of it? I always let the weight sit on my tofu for at the very least 30 minutes!!!! To make it more crumbly like mince/ground meat after you press it freeze it for at least 4 hours then thaw and crumble into dish or crumble into pan to brown.
Breading and frying your aubergine/eggplant will make it taste very nice, but be careful on the amount of oil you fry it in as that way of preparing the aubergine really absorbs a tremendous amount of fat!!!!! Its better to roast them in slices and use them that way or if you want them breaded, bread them and bake them and then use them in your lasagne.

When I make lasagna I combine the tofu with soymilk and some mustard and italian seasonings in the blender, it has the texture of ricotta and tastes delicious! I use both yellow and dijon mustard. Sounds weird, tastes great. Add lots of salt and pepper and spice to give it more flavor. Cayenne pepper makes it spicy if you like spicy.Sounds yummy!

If you favor the lasagna right the tofu will just add proper texture (blended and layered in it will be like the ricotta) and protein to the dish.Really it is mostly all in the spices and proper ratio of ingredients.

Yes. You just have to season it & crumble it up & such (make sure you drain & press it before starting too). The link Smedrik gave is good. I think there's a tofu "ricotta" recipe in How It All Vegan (or maybe a different S. Kramer book) too. I've made lasagne with tofu many times. You wouldn't know the difference.Virginia Said:

eggplant! simply cut it, salt it and drain it. im a turnip green fiend (im southern american) and keep cans of it hoarded for this very purpose, its like spinach but i prefer its flavor to any other leafy green. try also bay leaves and basil.George Said:
