Mexican ChickenThis creamy and spicy chicken main dish recipe is true comfort food for Mexican food lovers.

INGREDIENTS:
10 oz. can condensed cream of chicken soup
10 oz. can condensed cream of mushroom soup
1 cup green salsa
1 cup sour cream
1 onion, finely chopped
2 cloves garlic, minced
1 Tbsp. olive oil
12 corn tortillas, each torn into 8 pieces
4 cups chopped cooked chicken
1-1/2 cups shredded Cojack cheese
PREPARATION:
Spray inside of crockpot liner with nonstick cooking spray. In large bowl, mix soups, salsa, and sour cream. Cook onion and garlic in oil in small saucepan until tender, about 4 minutes. Add to soup mixture along with chopped cooked chicken. Layer tortillas and soup mixture in crockpot. Cover crockpot and cook on LOW for 4-5 hours until bubbly. Sprinkle with cheese, cover and let stand until cheese melts.

Slow Cooker Mexican Beef Stew
Need a change from classic beef stew? Go Mexican with this easy-to-make flavor-packed version that goes together in minutes!
Ingredients:
2 pounds beef stew meat
1 can (28 ounces) Progresso® whole tomatoes, undrained
1 cup frozen small whole onions, (from 1-pound bag)
1 teaspoon chili powder
1 envelope (1.25 ounces) Old El Paso® taco seasoning mix
1 can (15 ounces) black beans, rinsed and drained
1 can (11 ounces) Green Giant® Mexicorn® whole kernel corn with red and green peppers, drained
METHOD:
1. Mix beef, tomatoes, frozen onions and chili powder in 3 1/2- to 4-quart slow cooker.
2. Cover and cook on low heat setting 9 to 11 hours or until beef is tender.
3. Stir in taco seasoning mix, using wire whisk. Stir in black beans and corn. Cover and cook on high heat setting 15 to 30 minutes or until thickened.
Makes 6 servings
Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.
Special Touch
Serve this stew topped with shredded Mexican cheese blend and chopped fresh cilantro leaves for an extra-special touch.
Substitution
Frozen small whole onions, also called pearl onions, are loaded with flavor and are so convenient to use. If you don't have them on hand, you can substitute 1/2 cup chopped onion.

Tender chunks of pork loin are slowly cooked with chunky salsa and some pinto beans in your crockpot. Serve this entree recipe over fried slices of prepared polenta.
INGREDIENTS:
1 lb. boneless pork loin roast, cut into 1" pieces
20-oz. jar chunky salsa
15-oz. can pinto beans, rinsed and drained
PREPARATION:
Mix pork and salsa in a 3-4 quart slow cooker and cover. Cook on low for 6-8 hours until pork is juicy & tender. Add beans, cover crockpot, and cook 10-15 minutes until hot. 4 servings

1 1/2 lbs ground beef
1 medium onion, chopped
1 garlic clove, minced
1 can (14 oz) stewed tomatoes
1 can (10 oz) enchilada sauce
1 to 2 tsp ground cumin (I used 1 1/2 tsp)
1 tsp kosher salt
1/4 tsp black pepper
1 egg, beaten
1 1/2 cups cottage cheese
3 cups Mexican blend shredded cheese
8 flour tortillas (8 inch) cut in half
1 cup shredded cheddar cheese
In a large skillet, cook the beef, onion and garlic over medium heat until the meat is no longer pink; drain. Stir in the enchilada sauce, tomatoes, salt, pepper and cumin. Bring to a boil, reduce heat and simmer uncovered for 20 minutes.
In a small bowl, combine egg and cottage cheese; set aside. Spread 1/3 of the meat sauce into a greased 13x9 baking dish. Layer with half of the cheese blend, tortillas, cottage cheese and remaining meat sauce. Repeat layers and sprinkle with cheddar cheese.
Cover and bake at 350 for 20 minutes. Uncover; bake 10 minutes longer or until bubbly. Let stand for 15 minutes before cutting. Top with sour cream, guacamole or pico de gallo.
This recipe uses tortillas in place of the noodles...and sounds delish to me. I am going to try it.

2 cups crushed tortilla chips
Sliced ripe olives, guacamole, chopped tomatoes and sour cream, optional
Directions
In a large skillet, cook beef and onion over medium heat until meat
is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in
the salsa, beans, enchilada sauce, chilies, taco seasoning and
pepper; heat through.
Spread 1 cup meat mixture in a greased 13-in. x 9-in. baking dish.
Layer with two tortillas, a third of the meat mixture and 1 cup
cheese. Repeat layers. Top with remaining tortillas and meat
mixture.
Cover and bake at 375° for 30 minutes. Uncover; sprinkle with
remaining cheese and top with tortilla chips.

Preheat oven to 350 degrees F.
1 pound ground beef
1 can (4 oz.) green chilies
1/2 cup chopped onion
6 flour tortillas, 8" halved
1 envelope taco seasoning
1 can (14.5 oz.) diced tomatoes with chilies
1 can (8 oz.) tomato sauce
2 cups shredded cheddar cheese
1 can (15 oz.) chili beans
Brown meat and onion in large skillet. Drain. Stir in seasoning mix, tomatoes, tomato sauce, beans, and chilies. Layer half tortillas on bottom of greased 12" x 8" baking dish. Spread half of meat mixture on tortillas and sprinkle with half of cheese. Repeat layers. Bake for 30 minutes. Let stand 10 minutes before serving. Makes 6-8 servings.

1 (6 oz.) can tomato paste
2 c. cottage cheese
2 eggs, beaten
6 oz. lasagna noodles, cooked and drained
1 lb. Mexican Velveeta pasteurized cheese spread, sliced
Brown meat; drain. Add onion. Cook until tender. Stir in tomatoes and paste. Combine cottage cheese and eggs. Place half of noodles in 8 x 12 inch baking dish; top with half of cottage cheese mixture, meat mixture, and process cheese spread. Repeat layers of noodles, cottage cheese, and meat mixture. Bake at 350 degrees for 45 minutes. Top with remaining process cheese spread; continue baking until cheese is melted.
