Try a Taco Dip. Here is a good recipe.1 pound ground beef
1 (16 ounce) can refried beans
1/2 cup hot taco sauce
1 tablespoon chili powder
1 teaspoon ground cumin
1 cup sour cream
1/4 cup chopped onion
1/4 cup chopped tomatoes
1/4 cup black olives, sliced
1/4 cup jalapeno pepper rings
1 1/2 cups shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, brown ground beef and drain. Add refried beans, spicy taco sauce, chili powder and cumin. Spread this mixture into a 9x13-inch baking dish. Spread sour cream over meat mixture. Layer onions, tomatoes, olives, and hot pepper cheese over the sour cream. Top with the cheese.
Bake at 350 degrees F (175 degrees C) for 30 minutes.

Dessert - try Cheesecake Brownies. These are simple and sooo good.
1 (19.8 ounce) package brownie mix
1 (8 ounce) package cream cheese
1 egg
1/3 cup white sugar
Prepare the brownie mix as directed by manufacturer. Preheat oven to temperature indicated on box. Grease a 9x13 inch pan.
Spread the brownie batter evenly into the prepared pan. Using an electric mixer, beat together the cream cheese, egg and sugar until smooth. Dollop the cream cheese mixture on top of the brownie batter. Swirl together using a knife or skewer.
Bake according to manufacturer's instructions. Brownies will be done when a toothpick inserted comes out clean. Cool in the pan, then cut into bars and serve.

You can also try this recipe. This is a favorite now in my house. I just made some last night for my hubby's b-day.
Not Yo Mama's Banana Pudding
2 bags Pepperidge Farm Chessmen cookies
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant French vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream
Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

Ingredients:
1 large head garlic
12 cups water
4 cups chicken broth
4 pounds country-style pork ribs
1 teaspoon dried oregano (preferably Mexican), crumbled
2 ounces dried New Mexico red chiles
1 1/2 cups boiling-hot water
1/4 large white onion
2 teaspoons salt, plus 1 teaspoon
2 (30-ounce) cans white hominy (preferably Bush's Best)
8 corn tortillas
About 1 1/2 cups vegetable oil
Accompaniments: Diced avocado, thinly sliced iceberg or romaine lettuce, chopped white onion, diced radishes, lime wedges, dried oregano, and dried hot red pepper flakes
Directions
Peel the garlic cloves and reserve 2 for the chile sauce. Slice the remaining garlic. In a 7 to 8 quart heavy kettle bring water and broth just to a boil with sliced garlic and pork. Skim the surface and add oregano. Gently simmer pork, uncovered, until tender, about 1 1/2 hours.
While pork is simmering, wearing protective gloves, discard stems from chiles, and in a bowl, combine chiles with boiling-hot water. Soak chiles, turning them occasionally, for 30 minutes. Cut onion into large pieces and in a blender puree with chiles and soaking liquid, reserved 2 cloves of garlic, and 2 teaspoons salt until smooth.
Transfer pork with tongs to a cutting board and reserve broth mixture. Using 2 forks, shred the pork. Discard the pork bones. Rinse and drain hominy. Return pork to broth mixture and add chile sauce, hominy, and remaining teaspoon salt. Simmer posole 30 minutes and, if necessary, season with salt. Posole may be made 2 days ahead and chilled, covered.
While posole is simmering, stack tortillas and halve. Cut halves crosswise into thin strips. In a 9 to 10-inch skillet heat 1/2 inch oil until hot but not smoking and fry tortilla strips in 3 or 4 batches, stirring occasionally, until golden, 1 to 2 minutes. Transfer tortilla strips with a slotted spoon as fried to brown paper or paper towels to drain. Transfer tortilla strips to a bowl. Tortilla strips may be made 1 day ahead and kept, covered, at room temperature.
Serve posole with tortilla strips and bowls of accompaniments.
Just make sure to reheat it at school...except for the cold accompaniments.

Mexican ranch dip:1 envelope Hidden Valley Ranch dry dip mix
1 cup sour cream
1/4 - 1/2 cup salsa (depending on your tastes)
Stir it all together, and toss in some chopped tomatoes and diced green chillies to taste. Refrigerate at least 2 hours.
This is great served with tortilla chips!

CRAB MEAT DIP2 7 oz. cans crab meat
1 8 oz. package cream cheese
1 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon Old Bay seasoning
1 tablespoon Worcestershire
1/4 teaspoon Tabasco sauce
dash of cayenne pepper
salt to taste
3 cloves garlic, pressed
Soften cream cheese and combine with mayonnaise, sour cream, Tabasco, Worcestershire, cayenne, salt, garlic and Old Bay seasoning.
Stir in crab meat. Taste and adjust seasoning.
Make a few hours ahead and refrigerate.
Serve with potato chips, crackers, tortillas, etc.
DILL DIP
1 16 oz jar Hellman’s Mayonaise (2 cups)
1 16 oz container sour cream (2 cups)
1 tablespoon dill weed or more to taste
salt to taste
garlic powder to taste
Mix mayonnaise and sour cream until well blended. Add dill, salt, and garlic powder to taste.
Great dip to use with carrots, celery, apples, fresh broccoli, and cauliflower.

1 cup monterrey jack cheese or asadero cheese or any "Queso Blanco". Shred very fine.4 ounces green chilies, chopped very fine
¼ cup half and half
2 tablespoons onions, chopped very fine
2 teaspoons cumin
½ teaspoon ground cumin
½ teaspoon salt
1 serrano pepper, chopped very fine
1 tablespoon fresh cilantro, chopped very fine
If you wish the Serrano pepper and cilantro can be optional ingredients.
Place all ingredients in a double boiler and heat on medium. Cook until melted and well blended, stirring occasionally.

I'm not sure what you call this but it is a dish we have every year at Thanksgiving.Take jello (we use cherry) mix and add fruit to it (pineapple or fruitcocktail is what I've had). Put in refrigerator and let jell. One the jello has "jelled"(is that what you would call it) put some marshmallows on top. Then it's ready to serve.
