ingredients

7 lbs green tomatoes, slice 1/4-inch thick
2 1/2 lbs tomatillos, slice 1/8-inch thick
2 lbs Anaheim or new Mexican chiles, roast, peel, de-seed
1 lb yellow Hungarian wax chiles, seeded and chopped
1 Serrano pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped
1/2 bunch cilantro, rough chop
1 medium-size white onion, chopped
1/4 cup lime juice
1/4 cup apple cider vinegar
4 cloves garlic
4 tablespoon corn starch
2 tablespoon salt

Method:

Heat a large cast iron skillet to hot and toast the tomatoes and tomatillos without any oil. Do just one layer at a time and give each slice a nice dark brown color on both sides without burning. Remove when toasted to a glass bowl. Do not deglaze the pan.

In a blender, combine the tomatoes and tomatillos with the remaining ingredients in batch sizes to half-fill the blender jar. Finally make the puree...

Put the salsa on the side for dipping, not in the quesadilla.

Pico de gallo
4 fresh tomatoes
1 small fresh onion
1-2 fresh jalapenos
1/2 cilantro
1 tbs lemon juice.

Chop up the veggies to about diced size and mix. You can also put it in the blender to make it smooth. If you put it in the blender, add salt and 1 clove fresh garlic.

You are not requested to make Salsa for 40 people...not everybody eats or likes Salsa.
I bag of chips and a bowl of salsa will do...you can make the salsa the day before, this way all the flavors will blend together.


Makes about 3 cups ... double the recipe for 6 cups.
1 1/2 pounds plum tomatoes, seeded, chopped
3/4 cup chopped onion
1/2 cup chopped fresh cilantro
3 tablespoons fresh lime juice
3 tablespoons minced seeded jalapeño chilies (about 2 medium)
1 garlic clove, minced
Mix all ingredients in medium bowl. Season with salt and pepper. Cover; chill.
