Chili rellenos with seafood are very common in Mexico - usually in the coastal areas. I usually use Monterey Jack, mozzarella or fontina cheese - or a combination of them. You can use any seafood in the dish.6 Anaheim or any mild long green chili
2 cup vegetable oil
3/4 lb cooked white fish
1/4 lb mozzarella cheese, grated
1/4 lb Monterey Jack cheese, grated
1 teaspoon minced garlic
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
2 tablespoon chopped fresh cilantro or parsley
1/4 teaspoon salt
1/4 teaspoon black pepper
1 egg
2 tablespoons milk
1 cup yellow cornmeal
Make a slit with the tip of a paring knife in the pepper at the cap. Place the oil in a deep saucepan and heat to a temperature of 375F. Have a bowl of ice water handy.
Fry the peppers a few at a time for about 1 minute, or until the skin is blistered all over. Remove with tongs, and plunge into the ice water. Repeat until all peppers are fried. When cool enough to handle, gently rub off the skin.
Cut a slit in one side of the pepper, and remove the seeds, keeping the pepper whole. Set aside, reserving the oil.
In a bowl, mix together the fish, mozzarella, Monterey Jack, garlic, thyme, oregano, cilantro, salt and pepper. Gently stuff the mixture into the peppers, securing them with toothpicks. Chill for 30 minutes.
Beat the egg with the milk. Roll the peppers in the mixture, and then roll in cornmeal.
Heat the reserved oil to 375F. Fry the peppers for about 3 minutes, or until golden brown. As you fry, be careful not to crowd the pan. Remove the peppers from the pan with tongs, drain on paper towels, and repeat until all peppers are fried.

Easy Cheese enchiladas are one such dish that can be relatively quick to make for any occasion, especially Cinco de Mayo. The basic instructions are as follows:Start with a large backing pan; 9X13 will do
Lay in corn tortillas flat side by side
Add sliced or shredded Monterey Jack cheese to each tortilla
Add diced onions, jalepenos to taste to each tortilla and roll
Line up the rolled enchiladas side by side until the bottom of the pan is covered
Cover with additional cheese, onion and garnish with Jalapenos
Bake on 300 for 15 minutes or so
Serve with Refried beans and Mexican Rice

This is true, and most products made in mexico always have had high bacteria problems because the state government of mexico has never put in an effort to properly treat all their drinking water.I was in Mexico a few yrs ago, and 30 yrs ago...and nothing has changed in their water treatment. So they use this water with high FECAL content for drinking and their crops.

This is the best dip every. My family begs me to make it. It's as famous as my mother in law's teriake steak we have at family reunions.Basic ingredients:
1 8 oz cube cream cheese.
1 can beans only chili.
Now, I like with with the regular chili with meat. You can make it as hot or not as you want. I like hot...I buy the hot chili.
Add 1 4 oz can green chili's. Hot or mild
Add about 1/2 tsp. of any or all of the following: cumin, chili powder, Cayenne pepper.
Add about 1/2 cup of any kind of salsa.
Heat it up and let it simmer for flavor for a little while. Serve it warm with taco chips. It's so yummy, it's adicting. And so very easy. People think you are a genious. LOL. And that I am not. :)

chihuahua cheese or quesadilla cheese, its the real stuff, its also a whiteish color, it can be hard to find but check kroger or a meijer if you have one around. Yum this is making me hungry thinking about it!this may help!
