If they're raw, yes, you have to steam them, but I doubt that she gave you raw tamales.
To reheat them, you can steam them again (best choice), or put them in the oven, or in a fry pan, always in their husks.

Yes, I have that book. Here is the recipe.

Enchiladas de Polo

1 16 oz can tomatoes
1 4 oz can green chili peppers rinsed and seeded
1/2 tsp coriander seed
1/2 tsp salt
1 c sour cream
2 c finely chopped cooked chicken
1 3 oz package of cream cheese
1/4 c shopped onion
3/4 tsp salt
2 tbsp cooking oil
12 6" tortillas
1 c shredded Monterey jack cheese

Combine first four ingredients in blender, blend, then add sour cream, blend and set aside.

Combine chicken, cream cheese, onion and 3/4 tsp salt. In skillet heat cooking oil. Dip tortillas, one at a time into oil for 10 seconds or till limp. Drain in paper towel. Spoon chicken mixture on tortillas, roll, then place seam side down in baking dish. Pour tomato mixture over top. Cover and bake 350 for 30 mins. Remove foil, sprinkle cheese, then return to over until it's melted.

go to mexico, eat a lot and then find recipes on the internet. i make my own versions of lots of mexican. heres a couple tradtional mexican dishes to get you started --

one of my favorites is my version of mexican tacos al pastor -- if you never had them go to mexico and get some! Its pork (carnitas) and pineapple tacos with salsa taqueria --salsa taqueria is made from arbol chiles and tomatillos. i can get it in cans in florida at mexican markets. After you try it you will never want any other taco sauce again.

Have on hand @ all times in the pantry: corn tortillas, green tomatillos, white onions, paprika, vegetable oil, rice, garlic, cilantro, roasts or steaks in the freezer to season up and place in the oven, Cornish hens, cans of hominy, cans of pinto beans, or if u wanna make them fresh bags of pintos, Serrano and guadilallio peppers, whole chickens for soup, limes, radishes,green onions, tomatoes, and then just ask him what he likes by pointing, or eye fully watching his mom and watching how she makes things so that when u guys get your own place you know how to make what he was raised on. Chili verde - green chili w/pork

boneless pork roast - cut into small cubes
1 large can green chili's - diced
1 large can diced tomato's
2 cloves garlic-chopped finely
1/2 small onion - chopped finely
cumin-to taste
salt- to taste
brown meat with garlic, onion, cumin/salt (to your taste), add chili's and tomato's and simmer til meat is tender (the longer the better).
serve w/rice and beans

Beans.

dry pinto beans
bacon - 3 slices
2-3 jalapenos
3 cloves garlic -whole, peeled
salt -to taste

clean beans and remove any pieces of dirt/rocks, put into large pot, wash/rinse beans and then fill pot w/water add garlic salt, bacon and jalapenos, put on high, bring to boil and the lower heat so it goes to a low boil, let cook check often and add water as needed, they are done when beans are soft and tender.

1 c rice
garlic/onion finely chopped
cilantro
cumin
oil
tomato sauce
2 c water/chicken stock
brown rice in a skillet, til light brown add garlic/onion, add tomato sauce, water, cumin, cilantro, cover and simmer until all water has been absorbed.

Well I got your reciept, right here girl.....(as I grab my....) hehe,
All mex food is basiclly the same 4 major items, and it is how you put them together determines what you gonna call it.. a taco, enchallada,( Flat taco, usually layered, w/suace over them) taquito( rolled and fried taco) flaco, (same just smaller) so if you can make a taco, you can make just about any mexician dish.
Taco start with corn or flower tortilla, soft just fold and insert meat or your choice, usually ground beef, then add a salad, lettuce, tomato, cheese, hot sauce to flavor..
side dishes are mex. rice, and refried beans, you can buy them already refired if you wish, but is way cheaper to make them yourself, (don't fry them by the way) raw beans are some of the cheapest foods avaiable, soak them over night, in water, then heat them to boiling and cook for aprox 4 to 6 hours, on low simmer, stirring occ. make sure to add water from time to time, don't let them boil out the water.. then drain and serv..test to make sure the are fully cooked, they will be soft, otherwise hard and will break a tooth. DO NOT COOK THEM IN A MICROWAVE..They could explode when bitten into, the skin on them is tough enough to hold in the steam that forms inside the bean when cooked in a microwave and could actually hurt the inside of your mouth when it explodes..the beans can be saved and in fact the 2nd and 3rd times that they are reheated they actually taste better, the more smashed up they get the better the flavor, no need to spice, but you can add bacon, salt, pepper, ect to your taste..hence the name refried beans, they are an excellent and very cheap sourse of protien..
Add a Tacate , cervesa,(beer), and sopipilla, (fry bread) and you have a traditional Mex meal, well an americian style one...high calories, and affordable...make sure to have some peppers jalapans, ect as you desire.
For what your wanting you should be able to get that chili sauce in a can,and just add it to boiled chicken, or pork, drain most of the water, save mabe 1/4 of that, de-bone the meat, easy if fully cooked, then add sause to the soup mixture..simmer for 1/2 hour to let the flavors blend, add spice as desired, chili, ect.
Ok so now my mouth is watering, and I'm craving some mex,. food, what time is dinner served, I'll bring the fry bread, er...sopapillas and honey for desert...also fried ice cream is a favorite mex desert, and that is really fried, take a scoop of ice cream coat with crushed nuts...(ouch) and drop it into the fryer for about 10 sec. remove and serve... is so cool to eat, cuz it is hot on the outside then crunchy, then ice cream... all in your mouth at the same time...will have you cuming back for 2nds....
