Mexican Dinner

Roberto Said:

How is the pudding in the Swanson Mexican dinner made?

We Answered:

With high fructose corn syrup and preservatives and all kinds of really bad unpronounceable ingredients. Honesty, you probably don't want to know.

Though, if you want a really yummy coconut treat, here's a simple custard made with coconut milk which is really good:

2 large eggs
1/4 cup sugar
1 can coconut milk

Beat together & bake for 25-30 minutes at 350F. You can also microwave - custard tends to come out okay either way.

Javier Said:

How can i plan a mexican dinner party?

We Answered:

What's a simple way to change the entire feeling of a party? Create a theme!

A Mexican Fiesta is a great way to add some spice to your party. Following are the how-tos.

INVITATION:

There are so many options out there! You can either find an invitation with a Mexican style theme (a chili pepper, a sombrero), or you can make one yourself. Print out a graphic on heavy card stock, and decorate the invitation with raffia ribbon. Using bright colors, yellow, orange, purple, automatically indicate a festive event! Just add the wording MEXICAN FIESTA, and you're there!

DECOR:

The great fun with a Mexican Fiesta is that you can really go all out with it! Try different things. You can either buy Mexican inspired decor, or again the simple use of bright colors will add the festive theme. Use flowers such as sunflowers (which come in yellow as well as a red orange which is perfect for this type of event.

Also, a very easy way to add to the look of a Mexican Fiesta is to add Mexican style items such as Pinatas, Sombreros, or Sarapes (Mexican Multi-Colored Blankets). Your local crafts store may have these items.

Also, try La Mariposa imports for fun party items for little money!

FOOD:

There nothing liking a Mexican menu to get a party going. Simple food likes refried beans, tortillas, cooked meat, and rice can make an easy buffet. If you'd like to really get things going, try a few helpful tips:

1) Get large jars and make simple fruit juices (Horchata, Watermelon, or Tamarind). These traditional Mexican juices are simple to make (use a juicer), and add an authentic touch!

SIMPLE HORCHATA RECIPE

1 c Long Grain Rice
4 c Milk
1/2 c Sugar
1 t Vanilla
1/2 t Cinnamon
Ice

Place the rice in a bowl with enough hot water to cover. Let the
rice sit overnight. Next day, remove the water. Place 1/2 cup of
water, and 2 cups milk in a blender. Blend until rice is all ground
up. Mix in 1/4 cup sugar, 1/2 t vanilla, 1/4 t cinnamon. Do the
same with the other half of the ingredients. Strain through
cheesecloth (or whatever). Serve over ice. Makes 6 glasses.

2) Create a Gourmet Mexican Meal! Check out the Mexico Menu in FOODTV.COM for some great Mexican Gourmet Recipes!

TRADITIONAL MEXICAN MERINGUE KISSES

4 cups sugar

4 cups egg whites

1 tbsp cream of tartar

1 tsp vanilla

Various food colorings

Preheat the oven to 200°. On large baking sheets, place parchment paper over the entire sheet.

In a large bowl beat the ingredients until the egg whites are stiff and shiny. Separate the mixture into 3 bowls (or as many colors as you'd like). Add a few drops of food coloring to each mixture to make the meringues have a slight color (usually pink, green, and yellow). Place the mixture in a pastry bag with a star tip. Create "kisses", placing them about 1 1/2" apart on the baking sheet.

Bake the kisses for about 2 hours. Leave them in the oven until they are completely dry, and then remove.

3) Hand make tortillas on a griddle for your guests. Handmade tortillas are so simple, you can do them while your guests are waiting!

Edward Said:

i want to make an authentic mexican dinner plate and i need some recipes pls?

We Answered:

Since you have pork, why dont' you chop it up into big chunks and make "chile verde"... just brown your pork in a large skillet with salt & pepper. Boil or broil 3 large fresh jalapenos & about 8 large tomatillos (they're the green tomatoe looking veggies with a husk on them), put them in a blender with a garlic clve, piece of onion, cilantro and S&P, add to your cooking pork and simmer for another 20 minutes.
Side dishes, rice & beans & some warm corn tortillas.
They're going to love it! good luck.

Ryan Said:

What is a good menu plan for an authentic Mexican dinner for 8?

We Answered:

Pescado a la Veracruzana (aka Fish Veracruzana) is a wonderful and wonderfully easy authentic Mexican dish to make. It is a nice detour from burritos, fajitas and the like. No obscure ingredients are necessary just fish, tomatoes, jalapenos, onions, olives, capers and lime/lemon juice are the main ingredients in most recipes. You can also use shrimp with the same sauce. I serve mine with saffron rice.

I don't exactly have a recipe (I just throw it all together until it looks right, sorry) but I am sure you can find adequate recipes on the net.

Cindy Said:

What constitutes the traditional Mexican Day of the Dead dinner?

We Answered:

Typical is a lot of bread and a lot of sugar skulls with the names of the dead on them as well as beer and tequila.

Old traditions included dogs and candied pumpkins for dinner but more modern is turkey and chocolate
