Pecan Pie recipe

ingredients:

4 oz (100 g) blended vegetable fat
2 tbsp (1 oz) 25 g butter
1 2/3 cup (175 g) plain flour (All purpose)
pinch of salt
3 tbsp (45 ml) cold water

for the filling
3 eggs
1 tbsp (15 ml) milk
1 cup (180 g) Demerara (raw) sugar
2/3 cup (150 ml) 1/4 pt maple or corn syrup
1/2 stick (2 oz) 50 g butter, softened
2.5 ml (1/2 tsp) vanilla essence
175 g (6 oz) pecan nuts, halved

method:

1. Cream together the white fat and butter. Gradually stir in the sifted flour and salt, cream well after each addition. Add the water and mix thoroughly with the hands.

2. Knead lightly with extra flour, as this pastry is sticky to handle. Chill.

3. Roll out the pastry and line a 23-cm (9-in) ovenproof flan dish; flute the edge.

4. Chill this case while preparing the filling.

5. Heat the eggs and milk together.

6. Boil the sugar and syrup together in a saucepan for 3 minutes.

7. Slowly pour on to the beaten eggs and stir in the butter and essence.

8. Use half the nuts to cover the base of the pastry case,

9. Spoon the syrup mixture over and cover with the remaining nuts.

10. Bake in the oven at 220°C (425°F) gas mark 7 for 10 minutes.

11. Reduce the heat to 170°C (325°F) gas mark 3 and cook for a further 45 minutes, until the filling is set.

12. Serve warm or cold with unsweetened whipped cream.

Mexican Pie

1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can pinto beans, drained
1 (16 ounce) can refried beans
1 (2 ounce) can sliced black olives
1/2 (15.25 ounce) can whole kernel corn, drained
1/2 cup chopped green bell pepper
1 jalapeno pepper, seeded and minced
1 tablespoon ground cumin
1 tablespoon chili powder
ground black pepper to taste
5 (10 inch) whole wheat tortillas
1 1/2 cups shredded Cheddar cheese
1/2 cup salsa (optional)
1/2 cup sour cream (optional)
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10 inch round cake pan or springform pan. In a large saucepan over medium-high heat, mix black beans, pinto beans, refried beans, olives, corn, bell pepper, and jalapeno pepper. Season with cumin, chili power, and black pepper. Cook and stir until thickened, about 10 minutes. Lay one tortilla flat on the bottom of the prepared baking pan. Spread 1/4 of the bean mixture on the tortilla. Sprinkle 1/4 cup Cheddar cheese lightly over the bean mixture. Repeat layering, ending with a tortilla. Top with remaining Cheddar cheese. Bake 20 minutes in the preheated oven. Allow to cool slightly before serving. Serve with salsa and sour cream for garnish.

I think Taco Pie is not really a mexican dish but non the less a great meal. Try this fast and easy recipe.
pound lean ground beef
1/2 cup chopped onion
1 envelope (1 1/4 ounces) taco seasoning mix
1 can (4 ounces) chopped chiles, drained
1 tomato, chopped
1/2 cup Bisquick
1 cup milk
2 eggs
3/4 cup shredded Monterey Jack, Cheddar, or Mexican blend cheese
salsa
sour cream
chopped green onions

Grease a 9-inch pie plate. In a heavy skillet, cook ground beef with onion over medium heat, stirring occasionally. Drain. Stir in taco seasoning; spread in pie plate. Top with green chiles and about half of the chopped tomatoes. In a mixing bowl, combine Bisquick, milk, and eggs; stir until well blended. Pour over the mixture in the pie plate.
Bake at 400° for about 25 minutes, or until a knife inserted in center comes out clean. Sprinkle with the shredded cheese. Bake for a few more minutes, until cheese is melted. Serve with salsa, sour cream, and chopped green

this is my recipe for banana cream pie:

1 baked pie shell or graham cracker pie shell

2 boxes of jello banana cream pudding

2 whole bananas sliced

2 tub of cool whip or 1 cup of whipped topping with 1-2 tsp of sugar

directions:

bake off pie crust if using a dough pie crust for 10 mins in a 350 degree oven, or u can use a graham cracker crust ...

make the boxes of pudding as directed on the box adding 2 cups of cool whip to the pudding, and let set for 30 mins in a fridge, add the sliced bananas making sure to reserve about 5-9 slices for decorations

pour into a pie crust and chill in fridge another 10 mins and then add the cool whip on top of pie and decorate with banana slices and chill till ready to serve... at this point u may want to save the banana slices till ready to serve to keep them from browning on top...

serve straight from fridge and enjoy

Strawberry Margarita Pie

Ingredients:

2 cups hulled fresh strawberries
2/3 cups sugar
1 1/2 cup graham cracker crumbs
1 stick butter, softened
3/4 cup sweetened condensed milk
6 Tbsp tequila
4 Tbsp triple sec
1 Tbsp fresh lime juice
2 cups heavy cream

Preparation:

Toss strawberries with 4 Tbsp sugar and set aside. Blend graham cracker crumbs, rest of sugar and butter in food processor. Press into bottom and up sides of buttered 9 inch springform pan. Next, puree strawberries and sugar with condensed milk, tequila, triple sec and lime juice in processor or blender. Transfer to large bowl. Whip cream until stiff peaks form. Fold 1/3 of cream into puree. Gently fold in remaining cream. Pour filling into pie crust, cover and freeze until firm, preferably overnight. To serve, run hot, sharp knife around the sides of pan, remove dies and cut into wedges. Garnish with mint leaves and fresh strawberries
