I have a great deal of digestive problems so I do not eat iceberg lettuce because it is harder to digest. I use fresh baby spinach and the bagged dark green spring mix. Then I add whatever I am in the mood for. Sometimes I add cheese and canned mandarin oranges.Then on other times I add grape tomatoes, garbanzo beans (aka: Chick peas), cucumbers, and feta cheese.
For a mexican salad you could substitute soy crumbles for the ground beef.
If I am in the mood for onions in my salad I use a mild onion like a red onion or a sweet vidalia. Sometimes I grate carrots up and use them as a salad topping.
My Daughter found me a wonderful cookbook that has been helping me to lose weight and that does not upset my stomach and the recipes are so quick and easy. It is called "Hungry Girl 200 under 200" and I totally love it. I have never used a cookbook as much as I use this one. The author also has a great website www.hungry-girl.com.

i wonder if you are talking about ambrosia salad, i am not sure if it is mexican but, this salad uses sour cream and mini marshmallows along with coconut shreds in the recipe.
