TEXAS CORNBREAD TACO CASSEROLE

1 c. milk
2 pkgs. instant cornbread mix
1 pkg. taco seasoning
1 lb. hamburger meat
1 can cream corn
2 c. shredded Cheddar cheese

Preheat oven at 400 degrees. Brown hamburger; add taco seasoning according to directions. Mix cornbread (use jalapeno, if desired). Add 1 cup of milk and can of cream corn. Pour 1/2 of cornbread mixture in deep iron skillet or casserole dish; layer on hamburger and 1 cup of Cheddar cheese. Pour remaining cornbread mixture on top. Sprinkle remaining cup of Cheddar cheese on top. Bake at 400 degrees for about 30 minutes or until done.

1 med. tomato, finely chopped
1/4 c. coarsely chopped fresh coriander
2 tbsp. finely chopped white onion
1 fresh jalapeno chili, seeded and chopped
1 tbsp. fresh lime juice

Combine and stir. Cover and let stand 1-2 hours. Makes 3/4 cup.

In a medium bowl, combine Tomatillo, chiles, onion, cilantro, lemon juice, lemon zest, lime juice, salt, and pepper. Cover and refrigerate, at least 1 hour and better a day or two, to allow the flavors to mix.

SALSA

1 lg. can whole tomatoes, drained (very lg. - restaurant size)
1 (10 oz.) tomato paste
2 (10-12 oz.) tomato puree
2 sm. cans green chilies
1 tbsp. Worcestershire sauce
1 tbsp. horseradish
2 tbsp. sugar
3 tbsp. salt
4 tbsp. crushed red pepper
1 jalepeno
1 tbsp. garlic

Blend tomatoes slightly in blender. Combine all - the longer it sets the better it tastes. You may adjust temperature with more or less jalepeno or red pepper.

There are a thousand different ways to do it, you have to figure the kind you like. Often in the summer I'll simply dice up firm tomatoes, a jalapeno or two, a bit of garlic, some onions, mix together with some salt and squeeze a lime over it. You can add Cilantro if you like it. You can put it all in a food processor too if you prefer it smooth. You can add some tomato paste is you like it thicker. Go to allrecipes.com and do a search.
