2 chicken breasts cubed
3TBS olive oil
1/4 c parmesan cheese
2 cloves garlic minced
shot of white wine
optional, sliced mushrooms, asparagus,broccoli, or any other veggie that you like
crushed red pepper

brown the chicken in olive oil and minced garlic(careful not to burn the garlic) add the veggies of your choice and saute for a couple of minutes then add the wine and stir(trying to get the bits of chicken mixed in) top with the cheese and put over the pasta and sprinkle some red pepper flakes over the top.

I found this recipe for vegetarian speghetti:
INGREDIENTS
1 (16 ounce) package spaghetti
1 cup chopped onion
1/2 cup chopped celery
1 teaspoon garlic powder
3 tablespoons vegetable oil
1 (26 ounce) jar meatless spaghetti sauce
1 (16 ounce) can garbanzo beans or chickpeas, rinsed and drained
1 (14.5 ounce) can diced tomatoes with garlic and onion, undrained
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried oregano
1 bay leaf
1/4 cup grated Parmesan cheese


DIRECTIONS
Cook spaghetti according to package directions. Meanwhile, in a large skillet, saute the onion, celery and garlic powder in oil until tender. Add the spaghetti sauce, beans, tomatoes, sugar, salt, oregano and bay leaf.
Bring to a boil; cover and simmer for 10 minutes. Discard bay leaf. Drain spaghetti; top with sauce and Parmesan cheese.

Cooked fettuccine noodles
Cooked chicken, cut into bite size pieces
Alfredo sauce (buy ready made in a jar)

Mix all together, heat through & enjoy

As for me, give me a big bowl of hot cooked pasta, a lot of pecorino romano and a basic tomato sauce and I'm set:

6 cloves of garlic, chopped
Two 28 oz. cans of crushed tomatoes
3 tbs extra virgin olive oil
salt to taste
1/4 tsp dried oregano
4 fresh basil leaves, torn up

In a large sauce pan or deep frying pan, brown garlic in olive oil until lightly golden. Add tomatoes, oregano and salt. Bring to boil and reduce, and simmer about 30-45 minutes, stirring occasionally. Five minutes before serving, add the basil leaves.
