Well, make enough to take you through a day or two and you won't need to cook so much.

Boil a cup or so of pasta (like rotelle, ziti or penne) until it is almost cooked to where you would want to eat it. Mix it with your favorite can or jar of marinara sauce to coat it to the point you like. You can put in canned mushrooms or very thinly slice mushrooms, or zucchini at this. Add a generous amount of mozzarella and put it in the oven at 375 for a half hour. Check to see if it is bubbly. If not, leave it in until it is!

Top with more mozzarella put back in the oven for 5 minutes or so.

Not sure which country you are in, so can't recommend a fish for you, but you should speak to the fishmonger and ask them for a firm fleshed fish that won't break apart - they are more than happy to recommend.

Now,
put the fish fillets in to a bowl (that they can lie flat in)
pour some light olive oil over and half a lemon (juice), some salf and pepper, and leave to marinate for around 20 minutes.
Chop up some garlic cloves (depending on your taste, but around 1 per fillet) and set aside.

Heat a frying pan until its on a medium heat, and add the fish with the oil/lemon/salt/pepper mixture and cook through. You will find that turning the fish only once during cooking will help with it not breaking up, and gently digging your spatula underneath during cooking will help it not stick. Add the garlic once its mostly cooked through to prevent garlic from browning.

Once fish cooked through, brown on one side (leave it a little longer in the pan, maybe turn the heat up).

Once fish is on serving plates etc, add some chopped basil on top.

DELICIOUS! Just like in the mediteranean.

1 pound white fish such as cod, cut in 1 inch cubes
Shrimp, calamari (squid), prawns
3 large potatoes peeled and cut in 3/4 inch cubes
3 Tablespoons extra virgin olive oil
1 large onion chopped
2 teaspoons fresh garlic
fresh mushrooms, chopped

1 can black olives

Any combination of peeled fresh tomatoes, homemade tomato sauce, (not marinara nor meat sauce) or cans of the same that gives you the quantity you need for the occasion salt, pepper, fresh basil, oregano, and parsley or the dried equivalents.

The Olives are to be served as a side.

The importance of this dish is to allow it to cook slowly (this takes at least two hours to prepare).

Saute the onions and potatoes until the onions are translucent, in the olive oil.
Add garlic after combining all your ingredients to the pot right after the tomatoes, then the herbs, the salt & pepper.

Simmer on low until it is reduced, as thin or thick as you like it, this will take at least an hour.

Add the olives and your cubed fish and cook about 10 minutes more until the fish flakes. Pass the linguini

Serve with Antipasto

Antipasto is basically an appetizer consisting of Mozzarella, Provolone, Olives, Roasted Peppers, Hot Peppers, Marinated Artichoke Hearts, Fresh Italian/French Bread.

Usually it would have meat such as prosciutto, salami, pepperoni, soprosata in it as well, but since its Christmas Eve, these meats should be absent from the large plate of these foods piled high.


The calamari, clams and mussels are either simmered into tomato sauce and served over linguine or angel hair pasta, or boiled, steamed or baked
