Improved Olive Garden Alfredo PastaThis is an updated version of the "Olive Garden" Alfredo Pasta recipe. This recipe includes more grated Parmesan cheese and fresh garlic instead of garlic powder. You'll find this sauce thickens easier and has an improved Olive Garden taste. Just be sure not to crank the heat up too high when simmering the sauce or it could break, resulted in a not-so-creamy, curdled Alfredo.

1/2 cup butter
2 cloves garlic, minced
2 cups heavy cream
1/8 teaspoon ground black pepper
1 pinch salt
1/2 cup grated parmesan cheese
1 (12 ounce) box fettuccine pasta (or your choice of pasta)
Melt butter in a medium saucepan over medium/low heat.
Add the garlic, cream, pepper and salt, and bring mixture to a simmer.
Turn the heat down if the mixture reaches a rapid boil or it could boil over.
You just want a simmer.
Add the cheese, and continue to simmer sauce for 8 minutes or until thick.
While sauce cooks, bring 4 to 6 quarts of water to a boil and add the pasta.
Cook pasta for about 12 minutes or until done, then drain it.
Spoon pasta onto serving plates with Alfredo sauce poured over the top.

This is a modified version of the Fettucine Alfredo recipe in the new Joy of Cooking. It's very rich and I highly recommend using the best ingredients you can get.
2-3 servings 20 min 15 min prep
Change to: servings US Metric
8-10 ounces pasta (the kind in the refrigerator section of the store is best since it cooks much faster, in about 3 min)
3/4 cup half-and-half
3/4 cup parmesan cheese, grated or shredded (NOT the dry Kraft kind!)
1 clove garlic, minced very fine
1/4 cup butter
fresh-grated black pepper
salt
Boil water for pasta.
In a large frying pan (a steep-sided wok is ideal) melt butter on very low heat.
Start cooking pasta.
In frying pan, combine half and half, Parmesan, garlic, salt and pepper with melted butter.
Mix thoroughly and turn the heat up to medium (just hot enough to begin melting cheese).
Pasta should be nearly done by now; drain and pour into frying pan with sauce ingredients.
Toss together and serve immediately.

Ingredients:
* 1 pound fettuccine

Preparation:
Cook fettuccine noodles following package directions. Meanwhile, in a large skillet, bring half-and-half just to a boil. Reduce heat and simmer, stirring constantly, for 4 minutes. Remove from heat. Drain fettuccine well and add to half-and-half in skillet. Over medium heat, toss well and add butter pieces, nutmeg, pepper, and 3/4 cup of the Parmesan cheese. Toss again while heating through. Serve with a green vegetable or salad and more grated Parmesan cheese.

• 1 lb. of fresh, very thin fettuccine noodles
• 6 oz. butter, unsalted
• 6 oz. Parmigiano Reggiano cheese (aged 24 months), grated
DIRECTIONS
THIS RECIPE FOR the Original Fettuccine Alfredo was created in 1914 by Alfredo Di Lelio, concocted to tempt the palate of his pregnant wife who had lost her appetite.
Until now, the Original Fettuccine Alfredo has been a secret recipe, passed on from generation to generation. At the Alfredo restaurants, the fettuccine noodles are made fresh daily from a mix of three different flours, durum and organic eggs. For home use, however, the cook can purchase fresh fettuccine noodles at most supermarkets and delis.
Cook the fettuccine noodles in 1 gallon of salted boiling water for three minutes. At the same time, mix the butter at room temperature in a bowl with the grated cheese until the cheese almost dissolves, forming a smooth cream. If using a mixer, this should not take more than three minutes at which time the noodles will be ready. Strain the pasta leaving just a small amount of water and toss the noodles with the Alfredo sauce. Plate the preparation. Cheese lovers may want to sprinkle additional grated cheese on top.

1 pint heavy cream
1 stick (1/2 cup) butter
2 tablespoons cream cheese
1/2 - 3/4 cup Parmesan cheese
1 teaspoon garlic powder, add in more to suit your taste if you prefer
Salt and pepper, to taste
8 ounces fettuccine, cooked and drained
In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and garlic powder. Simmer this for 15 - 20 minutes over low heat.
Toss pasta lightly with sauce, coating well. Leftovers freeze well.
A good way to heat this back up ( if you have any left ), put in a skillet, add some more cream or half and half and some cream cheese. Warm and stir.

I saute baby bella mushrooms in some butter with garlic first. Add the whole thing including the butter to the alfredo sauce, and toss in a couple handfuls of Parm/asiago/Romano cheese. Pasta is amazing! Im here in Italy and enjoyed my first month with various pasta meals during pranzo...or lunch... try the below recipe...2 c. cooked chicken, chopped up
2 jars Alfredo sauce
2 c. mushrooms
1 lb. fettuccine or any pasta
2 tsp. butter
Saute chicken and mushrooms in butter until lightly brown. Pour in Alfredo sauce over chicken and let simmer for about 5-7 minutes. Pour mixture over cooked fettuccine or pasta. Sprinkle with Parmesan cheese.
