PEA AND BARLEY SOUP
2 cups split peas
6 cups water
2 14.5-ounce cans chicken broth (4 cups)
1/3 cup minced onion
3 large cloves garlic, minced
1 teaspoon sugar
2 teaspoons fresh lemon juice
1 teaspoon salt
1/4 teaspoon parsley flakes
1/4 teaspoon white pepper
dash thyme flakes
1/2 cup barley
6 cups water
1 cup carrots, diced
1/2 stalk celery, diced
Rinse split peas. Place in a soup pot with 6 cups water, chicken broth, seasonings, lemon juice, and sugar.
Boil one minute then reduce heat and simmer for about 1 to 1/2 hours or until peas are tender.
Meanwhile, combine the barley with 6 cups of water in a saucepan. Boil one minute, then reduce heat and simmer for 1 1-1/2 hours or until most of the water has been absorbed.
When the mixture has thickened, puree the peas in a blender or using a stick blender until smooth. Alternately, if you like, you may
Drain the barley mixture using a colander or cheesecloth and add to the split peas. Stir in chopped carrots and celery and simmer 15 to 30 minutes til the carrots are tender, stirring occasionally.
Remove from heat, cover, and allow sit at room temperature 15 minutes before serving.
SCALLOPED EGGPLANT AND TOMATOES
Peel and dice 1 medium eggplant. Sprinkle with salt and pepper. In a frying pan, saute 1/3 cup finely chopped onion in 2 tablespoons vegetable oil. Blend in:
Cook until thickened. Arrange alternate layers of the eggplant and the tomato mixture in an oiled casserole. Crush and sprinkle over the top, 1/2 cup corn flakes. Bake in a 350 degree oven 45 minutes. Six servings. One serving: 1 teaspoon oil, 0 milligrams cholesterol, 1 gram saturated fat, 3 grams linoleic acid, 3 grams protein, 14 grams carbohydrate, and 115 calories.
Scalloped Zucchini and Tomatoes: Substitute 2 pounds zucchini for the eggplant in the recipe above.

We Answered:When I have pasta, I eat it this way alot. It takes getting used to, but it's good when you do: Put approx. 2 pats of butter in the cooked pasta after you take it out of the pan. Add garlic powder to taste and salt and pepper. It's good!

We Answered:well first off, the tastiest and lightest dressing I know of is just plain balsamic vinegar..
Things to put into a salad:
-avocados have great nutritional value(make sure to not put too much of this because it does have fat in it)
-sun dried tomatoes
- fat free feta cheese (crumbled is good for salads)
- grilled chicken
- bell pepper
- tuna,or any fish (salmon is higher in fat)
- black beans
- ground turkey
- grilled eggplant
- hard boiled egg whites for protein( the egg yolk has the nutrients, but also all of the fat)
Also, if you like tuna, you can have a high protein- low fat tuna salad with these ingredients:
-light tuna chunck
-fat free mayo (it's sweeter than normal mayo)
- dried cranberries ( try to get the ones that don't have added sugar)
- green onions
Mash the tuna and then add all of the ingredients in amounts to your liking and there ya go!!!

We Answered:Put oil in a pot,put in 5-6 cloves of garlic you have put through a press.Saute 3 min. add parsley, a little of the water from the pasta you boiled.Salt and pepper to taste.A pinch of red crushed pepper. Cook for 5-10 min. Pour over pasta and serve.
