Alfredo Sauce

Ingredients

1/4 cup butter
1 cup heavy cream
1 clove garlic, crushed
1 1/2 cups freshly grated Parmesan cheese
1/4 cup chopped fresh parsley


Directions

Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve.

Feta and Bacon Cream Sauce

Ingredients

8 slices bacon, chopped
2 leeks, sliced
1 tablespoon butter
1/4 cup all-purpose flour
2 cups milk
8 ounces feta cheese, crumbled
ground black pepper to taste


Directions

Place bacon in a large skillet over medium-high heat. Fry for a few minutes, then add the leeks. Cook and stir until bacon is crisp and leeks are tender. Set aside.

Melt the butter in a saucepan over medium heat. Whisk together the flour and milk, then pour into the saucepan with the butter. Bring to a boil and cook, stirring constantly, until thickened.

Remove from the heat and stir in the feta cheese. Mix in bacon and leeks, then season with pepper to taste.
Serve over your favorite pasta.

Tomato Cream Sauce

Ingredients

2 tablespoons olive oil
1 onion, diced
1 clove garlic, minced
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 tablespoon dried basil leaves
3/4 teaspoon white sugar
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup heavy cream
1 tablespoon butter


Directions

In a saucepan, saute onion and garlic in olive oil over medium heat. Make sure it doesn't burn.
Add tomatoes, basil, sugar, oregano, salt and pepper. Bring to boil and continue to boil 5 minutes or until most of the liquid evaporates.

Remove from heat; stir in whipping cream and butter. Reduce heat and simmer 5 more minutes.

Sausage Veggie Sauce

Ingredients

1 pound Italian sausage links
1 tablespoon olive oil
1 onion, chopped
1 green pepper, chopped
1 cup sliced mushrooms
1 clove garlic, chopped
1 (16 ounce) can diced tomatoes
1 (15 ounce) can canned tomato sauce
1 teaspoon salt
1 teaspoon white sugar
1/4 teaspoon ground black pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 bay leaf


Directions

In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside. Slice into 1 inch rings.

In a large skillet, heat olive oil, garlic, onion, green pepper and mushrooms over medium heat until meat is nicely browned; drain.

Pour in tomatoes and tomato sauce; mix in salt, sugar, ground black pepper, basil, oregano, bay leaf and cooked sausage.

Simmer uncovered for 1 hour, stirring occasionally.

Bring a large pot of lightly salted water to a boil. Add pasta and cook.

Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

Four Cheese Sauce

Ingredients

2 cups heavy whipping cream
1/2 cup butter
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 cup shredded provolone cheese
1/2 cup grated Romano cheese


Directions

In a medium saucepan combine whipping cream and butter. Bring to a simmer over medium heat, stirring frequently until butter melts.

Gradually stir in grated Parmesan cheese, grated mozzarella cheese, grated provolone cheese, and grated Romano cheese.
Reduce heat to low, and continue to stir just until all cheese is melted.

Serve immediately, sauce will thicken upon standing.

Creamy Mushroom Sauce


Ingredients

3 tablespoons butter
1/2 cup chopped onion
2 cloves garlic, minced
4 ounces fresh mushrooms, sliced
1/2 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/4 cup all-purpose flour
2 cups milk


Directions

In a medium saucepan, melt the butter over medium heat. Add onions and garlic and saute about 3 to 5 minutes until onions are translucent.

Add mushrooms, basil, salt and pepper and saute an additional 5 to 10 minutes until mushrooms are soft and cooked to desired texture.

Remove the pan from the heat and blend in flour. Gradually add milk, stirring constantly.
Return mushrooms the pan to the heat and cook over medium heat until the sauce thickens and comes to a boil.

Reduce heat to a simmer and cook for an additional 2 or 3 minutes.

You can make a yummy, simple tomato sauce at home with a can of tomatoes, some tomato paste, onion, garlic, and basil plus some spices (salt, pepper, sugar possibly). I make this all the time.

In a sauce pan:
-Sauté the onion and garlic in olive oil until soft
-Add the can of tomatoes
-Add tomato paste--a couple of spoonfuls should be enough
-Add fresh basil if you have, if not you can use dried or you can omit this.
-Add salt, pepper, maybe sugar to taste
-Let it simmer for 10 or so minutes and it's done!

To make this spicy just add some crushed red pepper flakes and/or cayenne pepper.

You also add different spices (paprika, cayenne pepper, oregano) and more veggies (zucchini, peppers, mushrooms) to make it more exciting.

Parmigiano Reggiano Cheese, Grana Padano Cheese, Asiago Classico, Pecorino Romano, Fontina, Fontal, Montasio - there are a lot of possibilities.

Go to a specialty cheese store and ask to sample grating cheeses to go in a white sauce - they will let you try them and then you can pick which one(s) you like.

The best thing to come in cans are SAN MARZANO tomatoes (crushed, whole or pureed). With these you can make your own marinara, arrabiata, puttanesca....

Making your own sauce is not that difficult and I am sure will taste better than ready made sauces. Make large batches of just marinara and freeze them. When you defrost and heat them --- add capers, olives, mushrooms, sausages....

There are alot of great bottled sauces, esp the artisanal sauces (Dave's Gourmet, Rao...), they are much better than the Ragu's & Prego's.

2 garlic cloves, minced
Zest of 1 lemon
4 tbsp. butter
1 c. heavy cream
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. nutmeg
1/2 c. Parmesan cheese, grated
2 tbsp. lemon juice

In a saucepan over medium heat, melt the butter and cook the garlic and lemon zest until very fragrant.

Add cream, salt, pepper and nutmeg. Cook to heat through. can be made up to 2 days in advance and stored tightly covered in the ref.

Reheat sauce when ready to serve, whisking in the Parmesan cheese and the lemon. Adjust seasonings as needed. Serve over fettucini or tagliatelli. Sprinkle with additional Parmesan cheese.

Instead of the heavy cream, you can also make a rue with two teaspoons of butter and two teaspoons of flour, cooking over low heat until the flour just begins to turn golden. Whisk in skim or 1% milk adding slowly until you get it to the consistency you like. Keep it a bit thinner than you would want it for the pasta, as it thickens as it sits and you will be adding parmesan to it, which will thicken it even more. You can always just add more milk or warm water to get it to the right consistency when you reheat it.

There's pesto, alfredo, and tomato. If it's orange it's probably really greasy tomato sauce. There are many different ways to make tomato sauce, lucky me I have my families recipe past from generation to generation from abruzzo. you're not getting it. But I think what you're talking about is tomato.
