HEALTHY MAC-N-CHEESE

1 (14.5 oz. pkg.) Ronzoni Smart Taste rotini pasta
1/2 c. non-fat dry milk powder
3 c. 1% milk
3 tbsp. butter
1/4 c. flour
1 (12 oz. pkg.) frozen butternut squash puree
1 (8 oz. pkg.) shredded sharp cheddar cheese
1 tbsp. Worcestershire sauce
1 tsp. salt
1/4 tsp. pepper
3/4 c. crushed whole wheat Ritz crackers (about 18-20)
1/4 tsp. dried thyme

Preheat oven to 350°F. Coat shallow 2-qt baking dish with cooking spray. Cook pasta as directed. Drain well, reserve.
In small bowl, whisk dry milk powder into 1% milk until smooth. In large pot, melt 2 tablespoons butter over medium-high heat. Whisk in flour. Cook, whisking constantly until starting to brown. Whisk in milk mix until blended.

Cook, stirring until thickened. Stir in squash until smooth and blended. Stir in cheese until melted and smooth. Add salt and pepper. Remove from heat. Stir pasta into cheese sauce. Transfer to baking dish. Melt remaining 1 tablespoon butter, stir in crackers and dried thyme. Sprinkle over pasta mix.

Bake until bubbly and golden brown, about 15 minutes

PASTA/SEAFOOD DISH

4 tbsp. olive oil
1 lb. seafood (shrimp, scallops)
2 onions, sliced
1 green pepper (julienne)
1 red pepper (julienne)
1 bunch scallions, sliced
2 tomatoes, seeded, peeled and diced
4 oz. green beans
1 lb. angel hair pasta

Heat 2 tablespoons of oil. Stir-fry seafood (1 to 3 minutes); remove from pan. Add remaining oil. Stir-fry vegetables. Keep seafood and vegetables warm while cooking pasta. Pour stir-fry mixture over drained pasta.
PASTA DISH

My kids love Mozzarella cheese, so when we put Mozzarella on it, they eat it. So dad got this recipe from a friend at work and he always makes this for us on his day off. So we call it "Dad's Thursday Night Special".

3 or 4 cloves garlic
Olive oil
2 or 3 shakes dry basil
2 or 3 shakes dry oregano
4 or 5 cans Italian style tomatoes, crushed or whole (Sand W Italian style tomatoes)
Ground Lucatelli cheese
Mozzarella cheese, chopped up
1 lb. rigatoni macaroni

Cover bottom of large deep skillet with oil. Lightly brown garlic in oil (don't burn garlic). You may want to remove garlic after browning. Put in tomatoes. Add basil, oregano, salt and pepper (few shakes).
Add handful of lucatelli cheese. Cook over medium heat until boiling. Simmer for 1 hour, stirring occasionally.

Meanwhile, boil water and cook rigatoni according to package (best if not over cooked).

Grate Mozzarella cheese (enough to sprinkle over pasta). Put macaroni in large bowl, pour on tomatoes. Sprinkle individual servings with grated Mozzarella cheese and lucatelli cheese.

Serve with fresh Italian bread and a side of broiled sausage. Make a salad, and serve the red wine

first of all, boiled a desired pasta, i prefer fettuccine and penne

the easiest is:

heat butter or olive oil, add chopped garlic, add sliced mushroom, add the pasta, seasond it well, with salt and crusted black pepper, add freshly grated cheese (parmesan and or cheddar) serve it right awat.

pasta with pesto is also quick and easy, first you heat oilve oil in a pan, add the pasta, add the tablespoon of pesto, reduce the heat (to prevent the basil burned) tos it well, add parmesan, and season it well.

Pasta with Garlic and Olive Oil. Very quick and simple and delicious.
Boil 1 box (pound) of pasta - any shape you like.
While it is boiling, cut up 5-10 cloves of garlic (depending on how garlicy you like it) and slice the garlic into little pieces.
Sautee the garlic in a good amount of olive oil (never measured - I'd guess about 1/3 of a cup.
Season with salt and pepper.
When the pasta is done, drain it, keeping about a cup of the pasta water.
Put the garlic and olive oil in the pot the pasta was cooking in, then put the pasta back in that pot and mix, sort of frying the pasta a bit.
Turn off the heat and mix in the past water.
Sprinkle some chopped (or dried) parsely on top
Serve with lots of grated romano cheese on top.

It basically takes however long it is to boil water and cook pasta. My wife loves this, we make it all the time, usually with some sauteed broccoli raab.

Cook the pasta in the stock, let it cook until soft and the pasta has absorbed the stock. You can add veggies to it if you wish by stir-frying diced bell pepper, shredded carrots etc. Baby peas would be awesome in the mixture.
