What's the best scallop pasta recipe ala Longhi's in Hawaii? We Answered:
Longhi's does not offer its recipe online. However, I thought this was intereting. At Google, right under Longhi's was a website called Real Restaurant Recipes. In it, they give a recipe for Scallop Pasta. It could be Longhi's recipe, or it might taste very close to what you're looking for. For that reason, I decided to post it here. You could try it and see whether it comes close, then make some changes, if necessary. Here is the recipe:
SCALLOP PASTA
(Linguini with Scallops)
INGREDIENTS:
6 oz. clarified butter
To clarify butter:
Melt butter over very low heat
Skim off what comes to the surface
Slowly pour off the oil part into another container
Discard the solids
1 1/2 pounds sea scallops
6 ounces sun-dried tomatoes
1 pound linguine, seasoned with Kosher salt
Juice of half fresh lemon
1 teaspoon dried basil (1 tablespoon fresh basil is best)
4 ounces white wine (Pinot Grigio is best for this recipe)
Salt and fresh black pepper
4-6 ounces of freshly grated Parmesan cheese
Fresh basil leaves for garnish
INSTRUCTIONS:
Cook linguine as directed on package (al dente)
Drain and rinse with hot water and keep linguine warm
If using sea scallops and they are very large, cut them in half (or quarters)
Dry the scallops on and with paper towel
Heat the clarified butter in a large sauté pan over fairly high heat
Place the scallops and the sun-dried tomatoes in the sauté pan
Quickly sauté, shaking the pan often to keep the scallops from sticking (remember, they cook quickly)
When the scallops are about half done (about 2 minutes for bay scallops and cut sea scallops – 3 minutes for whole sea scallops) deglaze with white wine (pour wine around inside edges of pan) and reduce by cooking until wine is nearly evaporated
Add pasta, basil and lemon juice and cook until pasta is heated through
Correct seasoning with salt and fresh ground black pepper
Pour into pasta bowls and garnish with Parmesan cheese and fresh basil leaves
TA-DA! You have a delicious Scallop Pasta meal! Serve it with garlic bread and a salad.

Looking for some easy scallops & pasta recipes please? We Answered:
SAUTEED SCALLOPS WITH LEMON FETTUCCINE1 dozen scallops
Salt and pepper to taste
Wondra flour, (or substitute all purpose), as needed
Olive oil as needed
¾ cup dry white wine
3 tablespoons fresh lemon juice
3 cloves garlic, chopped
1 teaspoon lemon zest
12 oz. fettuccine
Chopped parsley to taste
2 tablespoons butter or more to taste
Boil the fettuccine until almost done. Drain and mix it with a little bit of olive oil to prevent sticking and set it aside. Season the scallops with salt and pepper and dredge them in the flour. Sauté the scallops in a large skillet in the olive oil until browned on each side. Make sure the pan and oil are very hot. As soon as they’re browned on each side they’re done. Remove the scallops and deglaze the pan with the white wine and lemon juice. Reduce the liquid by half. Add the garlic and lemon zest and cook for 1-2 minutes. Add the partially cooked fettuccini. Season with salt and pepper and cook the pasta in the sauce until al dente. Just prior to the end of cooking, add the parsley, butter and scallops and cook until butter melts.
