This simple, light, tasty tomato sauce is good on any pasta, ravioli, etc. All the items marked 'optional' are departures from the basic sauce. Easier to peel the tomatoes if you immerse in boiling water for about 1 1/2 minutes. Allow to cool.

* 1 medium onion, chopped
* 1 carrot, diced
* 1 rib of celery, with leaves, chopped
* 2 T good olive oil
* 5 leaves of basil, torn, not cut
* 1 pound (2 or 3 medium) fresh, ripe tomatoes - skinned, seeded and drained, or 1 14 oz tin of Italian plum tomatoes

OPTIONAL, ADDITIONAL OR IN PLACE OF:

* 1/2 dried chili pepper, pepperoncino - to taste
* 1 clove of garlic, minced
* 2 - 3 sprigs of parsley, chopped


IN a saucepan with the olive oil, saute the carrot, onion, celery and whatever optionals until transparent, about 5 minutes on medium heat.

ADD the basil leaves, then the tomato. Stir.

SIMMER on low heat until the sauce thickens - about half an hour. Do not add water if it becomes too dry, add a bit of olive oil.

SERVE on the pasta of your choice. Accompany with Parmesan or Pecorino cheese.

Always use good quality Italian style tomatoes never stewed tomatoes makes a huge difference in flavor ,and a good quality tomato paste I use half real butter and half olive oil to lightly brown my minced garlic and chopped onions then cut up my Italian plum tomatoes and add with 1/2 can of water get that to simmering then add whatever herbs you like like basil & a little oregano, a bay leaf or 2 , 1/2 teaspoon sugar to sweeten the sauce but not make it taste sweet , let simmer then add a can of tomato paste and about 1 to 2 cans if water salt, and pepper can also use a good pinch of red pepper flakes ( not cayenne pepper) if you like , simmer covered If you want meatballs make ahead of time and refrigerate till sauce has simmered at least 45 minutes then add your meatballs and continue simmering another 45 minutes ... roll meat mixture into balls and drop into simmering sauce I like to use half pork sausage half ground chuck chuck beaten egg bread Italian bread crumbs garlic powder 1/2 cup parmesan cheese salt & pepper for my meatballs and simmer in my pasta sauce till they are tender & delicious Sometimes I also add a pound of Italian sausage cut them in hal brown well then add to the simmering sauce serve with parmesan cheese on the side , a good loaf of Italian bread or make hot garlic bread another way is to take out of oven sprinkle generously with shredded mozzarella cheese slip back in oven till melted and have hot garlic cheese bread I am Italian, my father is from Italy .

i agree with Susan.. its Ogli Olio... olive oil with garlic very good!!! and healthier the cream... you can also do this... take you favorite marinara or Red sauce and add alfredo... its a creamy marinara.... its called Romono.... its very good!!!

Basic Marinara Sauce recipe:
Makes enough sauce for one pound of pasta.

4 tablespoons olive oil
2 large garlic cloves, minced
1 (28 ounce) can chopped tomatoes
1 teaspoon dried basil (about 10 leaves fresh)
Salt and pepper

Lightly sauté garlic in olive oil. Remove from heat. Add tomatoes, basil, salt and pepper and return to heat. Simmer for about 20 minutes, stirring occasionally.

Variations:
substitute 1 small chopped onion for garlic
substitute oregano for basil or use both
add 1/4 cup dry white wine
add 1/4 teaspoon crushed fennel seed

Olive Garden Alfredo Sauce

Well I finally figured out how to get that taste. Let the sauce simmer as long as you can!
Ingredients

1 pint of Heavy Cream
1 stick of butter
2 Tbsp. Cream Cheese
1/2 - 3/4 C. Parmesan cheese
1 tsp. Garlic powder



Methods/steps
In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and Garlic powder. Simmer this for 15 - 20 minutes on low. You may wish to season with a little salt and pepper. I have done this with half and half, but we prefer the heavy cream. But I wouldn't try it with plain milk.

let the sauce simmer about an hour or so.
