Good EASY recipe- no prep time, and can be doubled, or even tripled, etc.:CHICKEN WITH SUN-DRIED TOMATOES & CREAM
Serving Size : 2 -4
4 Boneless, skinless chicken
-breasts
3 tb Butter
Salt & Pepper to taste
1 lg Shallot, minced
1/2 c Heavy cream
1/2 c Dry white wine
1/8 ts Cajun poultry seasoning
1/4 c Sun-ripened dried tomatoes
Slice chicken breasts into 3 pieces, salt and pepper and saute in butter
until lightly browned. Remove chicken and saute shallot until softened. Add
balance of ingredients and bring to boil, stirring until sauce thickens
slightly. Return chicken to skillet and simmer, coating with sauce. Serve
with pasta of your choice

1 cup heavy cream3 tablespoons butter
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1/4 cup chopped sun-dried tomatoes
salt and pepper to taste
1 tablespoon pine nuts (optional)
Add mushrooms to taste
Heat the cream and butter in a saucepan over medium heat until almost boiling, but do not boil. Add mozzarella and Parmesan cheeses, and stir until melted. Throw in mushrooms. Stir in the sun-dried tomatoes, and season with salt and pepper. Remove from heat and serve over pasta with a sprinkling of pine nuts.
(Thats just the sauce, so boil some noodles and add!

They go really good on pizzas, in chicken Alfredo pasta, macaroni and cheese (believe it or not), and salads. I generally like to lightly saute my sun-dried tomatoes (unless there are going into something in which they are going to cook for a while).Vernon Said:

I would only add 1 clove of garlic. Seems that bottled stuff like peppers have a strong flavor when it's all ready in there.If it's not strong enough add one later on to the pasta.

Nice!! Now I'll think of some complementary flavours to match this beauty. Be good to know if it was long or short pasta, but anyway..... The sauce must not be napoli or that would knock out the SD (Trade abbreviation for) taste and we do not want to go losing that. So either olive oil or a light ( not heavily reduced ) cream sauce. Let's saute some nice mushies and add some garlic and a little bacon and roast capsicum (optional) the red caps roasted gives a lovely smokey flavour. Right, so, saute all this, deglaze w a little white wine. Season w salt and cracked black pepper. Add enough olive oil, say third of a cup and toss through the pasta in the sauce. Check seasoning, cook out over high heat briefly, add some spinach leaves and a knob of butter. Serve, garnished w parmesan and chopped parsley. Although this may seem long it's just a thorough explaination to ensure you get to enjoy this lovely type of pasta. Ingredients are inexpensive and whole dish not very hard or time consuming.....Bon Appetite!!Kyle Said:
