Barley is a great substitute. Here's how to prepare it, in case you don't have a recipe:

Rinse barley first using a strainer. Pick out any debris that might have made it through processing.
Step2
Allow barley to soak overnight in water if you want to reduce your cooking time. Use two cups of water for each cup of barley.
Step3
Decide whether you'll be using water or broth to boil your barley.
Step4
Use 2 1/2 to 3 cups liquid to 1 cup barley. Add your liquid to the pot.
Step5
Bring water or broth to a boil.
Step6
Add barley to boiling water or broth and stir together. Cover the pot with a lid and reduce the heat to low. Cook for 15 minutes if you pre-soaked your barley overnight. Otherwise, cook your barley for 35 to 40 minutes

Would you settle for a legume/lentil recipe instead? I really love this - I got it from Gourmet last year.

Lentil Salad with Tomato and Dill
1 cup dried lentils (preferably small French lentils)
1 large garlic clove, chopped
1 teaspoon salt, or to taste
3/4 lb tomatoes, diced (2 cups)
4 large scallions, thinly sliced (3/4 cup)
1/4 cup chopped fresh dill
1/4 cup thinly sliced fresh basil
3 tablespoons red-wine vinegar, or to taste
1/4 cup extra-virgin olive oil
1/4 teaspoon black pepper

Bring 4 cups water to a boil in a 2-quart heavy saucepan with lentils, garlic, and 1/2 teaspoon salt, then reduce heat and simmer, uncovered, until lentils are just tender, 15 to 25 minutes. Drain in a large sieve, then transfer to a large bowl.
Toss hot lentils with tomatoes, scallions, dill, basil, vinegar, oil, pepper, and remaining 1/2 teaspoon salt, or to taste.

Makes 4 to 6 side-dish servings.

Why do most vegan recipes call for baking, cooking, frying? What happened to the good ol' raw foods?

It is cuz they want to give you more options that just plain old raw veggies. Who can't pick up broccoli or strawberry and eat, no recipe needed. The only recipe needed for raw veggies is a dressing maybe.
