The way I make bean salad is with chickpeas (garbanzo beans), kidney beans, black beans, yellow corn, purple or yellow onions, minced garlic, olive oil, balsamic vinegar, and cilantro.

COLD HERBED GARBANZO BEANS

Serves 4

1 16-oz. can garbanzo beans, drained
1/4 cup parsley,chopped
1/2 cup sweet onion, chopped
1/2 cup tomato, chopped
1/4 cup ripe olives, chopped
1 teaspoon cumin, ground
1 garlic clove, minced
1 tablespoon white wine vinegar
1 teaspoon dried mustard
2 tablespoons olive oil


Directions
Combine first seven ingredients in large bowl; mix well.

Whisk together vinegar and mustard, add olive oil to blend; add to bean mixture.

Toss well.

Chill several hours.

a vinaigrette would be good. italian also. it's just preference. whatever you like personally.

add some veg and spices to the beans. don't just eat them plain. add tomato. garlic. onion. red pepper. corn. salt. black pepper. basil.

nuts even. cashews. almond, pine nuts. pecans. peanuts.

try different combos of spices. legumes vegetables.

beans are great. but dress em up with some more of your favorites.

Easy to make recipe for 3 bean salad with a great marinade!

3-Bean salad made with kidney, green, and wax beans is a summer picnic treat.

Ingredients:

1-15-oz.can light red kidney beans (drained)
1-15-oz.can green beans (drained)
1-15-oz.can wax beans (drained)
1 medium size onion, sliced in onion rings
*
Mix together in large bowl

*Combine and heat on top of stove:

1 1/2-cups regular sugar
1-cup cider vinegar
1-tbsp. vegetable oil

Pour over beans, and let set 8 hours in refrigerator. Stir every so often. Better if they sit over night.
