BLACK EYED PEA SALAD
Salad:
4 cups black-eyed peas, cooked and drained
1 cup white onion, small dice
1 1/2 cups red pepper, medium dice
1 cup Kalamata olives, pitted and chopped
2 tablespoons fresh oregano, picked and chopped
1/2 cup flat leaf parsley, picked and chopped
Dressing:
1 1/2 cups extra virgin olive oil
1 lime, zested
2 limes, juiced
2 tablespoons garlic, chopped
1 tablespoon sugar
Salt and fresh ground pepper, to taste
Directions:
Combine the first 6 ingredients in a large bowl.
Mix dressing in a separate bowl and pour over salad. Adjust with salt and pepper, to taste.
Salad is best when made a day ahead.

Here's a couple of recipes I found....they both call for avocados...enjoy!

Texas Caviar

3 tablespoons red wine vinegar
2 teaspoons hot sauce (like Texas Pete)
1 tablespoon minced garlic
1 1/2 tablespoons olive oil
1 avocado, cubed
1 (15 ounce) can white corn kernels, drained
1 (15 ounce) can black beans or black-eyed peas, drained
3-4 whole roma tomatoes, diced
1 cup diced green onions
1/2-3/4 cup chopped fresh cilantro
salt & pepper

Whisk together the vinegar, oil garlic and hot sauce.
Then fold in the avocado and the rest of the ingredients.
Season to taste and serve with Tortilla chips as an appetizer or you can serve also as a salad in lettuce lined bowls.

Texas Caviar

3 cups black-eyed peas, pre-cooked or 2 (15 ounce) cans black-eyed peas, drained
1 medium onion, finely chopped
2 (4 1/4 ounce) cans chopped black olives
2 medium tomatoes, diced
2 jalapeno peppers, stems and seeds removed
2 tablespoons red wine vinegar
1 tablespoon olive oil
1 clove garlic
1 lime, juice of
1 avocado, chopped
salt

Place peas in a colander and rinse off juice.
Drain well.
Combine black-eyed peas with next 3 ingredients in a medium size mixing bowl.
Place jalapeno peppers, vinegar, oil, garlic clove, lime juice and avocado into blender and combine until smooth.
Add avocado mixture to pea mixture and combine well.
Add salt to taste.
Chill for a minimum of 2 hours.
Serve with tortilla chips or corn chips.

take the dairies and use it for breakfast. take the bread, eat as much pb and j as possible throughout your time. use the rices/grains and potatoes for dinners.(sour cream goes with the potato.) try to spread out the fish and meats for dinners. try to make dinner the biggest meal, eat light in the morning and for lunch. veggies shoudl be used more for lunch; beans... why not bean soup? thats as much as ive got here; try categorizing the stuff then sort it out. hope this helps!

Good for you! Ive recently became a vegetarian too, its been about a month though for me, and Im not really that tempted either, I feel healthier actually, Im thirteen by the way,

So Ive been researching too and basically what you need to do is-

Drink a glass of milk with breakfast lunch dinner, I dont like a lot of milk so i add a little nesquick to it at breakfast and such

drinking water is also very important, 8 glasses a day is a little extreme Id aim for more realistic goals like two- four glasses of milk and 2-4 glasses of water daily,

you need to eat beans ( i personally am not a big fan ) if not those then you need to eat lots of eggs and nuts ( I LOVE peanut butter! )
this will help keep your protien up!

whole grains, like wheat bread, and whole grain pasta and such

to help keep your fiber up eat lots of dark leafy greens like spinach leafs in your salad, green beans, its important to eat lots of vegatables.

fruits, are good for your vitamins!

Id look into daily vitamins for vegetarians too... they sell them at wallgreans and walmarts and even krogers and rite aid!

I don't know the recipe your requesting, but here is my favorite recipe. You can add or omit to your desire.

******COUNTRY BLACK EYED PEA SALAD
Romaine leaves
1 (16 oz.) can red kidney beans drained
1 (16 oz.) can cut wax beans drained
1 (16 oz.) can black eyed peas or limas, drained
1 (16 oz.) can cut green beans, drained
1 med. green pepper, thinly sliced into rings
1 med. onion, thinly sliced and separated into rings
1/2 c. sugar
1/2 c. wine vinegar
1/2 c. salad oil
1 tbsp. snipped parsley
1 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. dried tarragon leaves, crushed
1/2 tsp. dried basil leaves, crushed
Line large glass salad bowl with Romaine. Layer drained kidney beans, wax beans, black eyed peas, green beans and pepper rings in order given. Top with onion rings. Thoroughly combine sugar, vinegar, oil, parsley, salt, dry mustard, tarragon and basil. Drizzle over vegetables. Cover; chill thoroughly, stirring occasionally. Just before serving, stir; then drain. 12 servings.
