A genuine Ceasar salad is made up simply of romaine lettuce (chopped), and served with the dressing, parmesan cheese, and croutons...that's it. Simple and classic. Romaine is vital though - don't sub another lettuce, it's just not the same. And try to get a quality parmesan for it, and if possible, make the croutons yourself. (and make sure the dressing has anchovies in it - no one will know, but it's what truly gives a ceasar salad its flavor!)(Clare - !!! This is a great recipe from cooks.com, I have made this a lot and it's great, I hope you like itMEXICAN CAESAR SALAD
1 1/2 heads Romaine lettuce
1/2 red pepper, julienned & roasted
1 c. grated Monterey Jack cheese
Tortilla chips for garnish
2 plum tomatoes
1/4 c. pinon nuts
1/4 c. olive oil
1 tbsp. chopped garlic
4 bunches fresh basil
1/4 c. lemon juice
3 anvhovy strips (more or less as desired)
1/2 c. grated Parmesan cheese
12 oz. beef fillet, must be all 1 piece
1 tbsp. chili powder
1 tbsp. granulated garlic
1/2 tbsp. ground cumin
1/2 tbsp. ground coriander
Pinch white pepper
Combine chili powder, granulated garlic, cumin, coriander and white pepper; coat the tenderloin with the spice mixture. Coating should be about 1/8 inch thick. Roast for 15-20 minutes until medium. Allow meat to cool.
Meanwhile, combine pinon nuts, garlic, basil, lemon juice, anchovies and Parmesan in a food processor. Continue to process while adding the olive oil in a slow drizzle. Use a feed tube if possible. If the resultant mixture is too thick, add a bit of warm water or lemon juice.
Cut the lettuce across the leaves as for a standard Caesar salad, and toss it with the dressing. Put on plates, top with shredded cheese and place 3 to 4 strips of meat per serving atop the salad. Garnish with tortilla chips, quartered tomatoes, the red pepper strips and a dollop of dressing on each meat strip

CAESAR SALAD FOR 2INGREDIENTS
1 cup croutons.
1/4 cup grated parmesan.
baby cos lettuce.
a handful of grape tomatoes.
1/2 Lebanese cucumber, sliced.
2 chicken thigh fillets.
2 bacon rashers, rind removed.
2 teaspoons finely grated lemon rind.
1 garlic clove, chopped very finely.
Dressing:
1/4 cup whole egg mayo.
1 teaspoon Dijon mustard.
3 teaspoons warm water.
3 teaspoons lemon juice.
3 teaspoons Worcestershire sauce.
salt and pepper to taste.
METHOD
1. Pre-heat oven 180 degrees.
2. Marinade chicken with lemon rind and garlic, roll up thighs and wrap a bacon rasher around each one, secure with toothpicks. Bake until chicken is fully cooked. put aside to cool. Slice finely.
3. Whisk all dressing ingredients together.
4. Get together croutons, parmesan, lettuce leaves, tomato, cucumber, chicken/bacon and dressing in a bowl, toss, divide into 2 bowls.
Buttermilk Chicken Caesar Salad
Ingredients
Serves 4
* 1 1/2 cups low-fat buttermilk
* 2 tablespoons fresh lemon juice
* 1 garlic clove, pressed through a garlic press
* 1/4 cup grated Parmesan cheese
* coarse salt and ground pepper
* 3 boneless, skinless chicken breast halves (6 to 8 ounces each)
* 2 slices multigrain bread
* 1 tablespoon olive oil
* 1/4 cup light mayonnaise
* 2 medium heads (1 1/2 pounds total) romaine lettuce, cut into pieces
* 1/2 small head radicchio, thinly sliced
Directions
1. Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil. In a medium bowl, combine buttermilk, lemon juice, garlic, and Parmesan. Season with salt and pepper.
2. Place chicken in a resealable plastic bag; reserving 1/2 cup for salad, add buttermilk mixture. Refrigerate chicken at least 15 minutes and up to 1 day.
3. Meanwhile, make croutons: Place bread on prepared baking sheet. Brush both sides with oil, and season with salt and pepper. Broil until toasted, 1 to 2 minutes per side; cut into 1-inch pieces (and reserve baking sheet).
4. Transfer chicken to baking sheet; discard marinade. Broil until opaque throughout, 14 to 16 minutes. Let rest 5 minutes; thinly slice crosswise. In a large bowl, stir together mayonnaise and reserved buttermilk mixture. Add romaine, radicchio, chicken, and croutons; toss to combine. Serve immediately.

Ingredients
1 bag Waitrose Solo Watercress
4 tsp olive oil
2 tsp lemon juice
Salt and freshly ground black pepper
8 slices smoked salmon
Tabasco sauce
1 tbsp soured cream
200g tub Waitrose Snow Crab Cocktail
Method
1. Divide the bag of watercress between 4 starter-size plates. Drizzle with olive oil and lemon juice. Season. Top each with 2 slices of smoked salmon.
2. Stir several drops of Tabasco sauce and the cream into the crab cocktail. Spoon over the salmon. Season with black pepper. Serve within 30 minutes.

2 2/3 tablespoons red wine vinegar
1 1/2 cups olive oil
3 1/2 ounces parmesan cheese
1 tablespoon Worcestershire sauce
1 1/4 ounces crushed garlic
1 1/2 ounces anchovy fillets, canned in olive oil, drained
1 cup pasteurized eggs (or Egg Beaters)
1 tablespoon lemon juice
1 tablespoon salt
1 tablespoon pepper
1 tablespoon dry mustard
Blend all ingredients 20 seconds on high in your blender and then 20 seconds on low.
Makes 1 quart.

1 head romaine lettuce
3/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 tablespoon ground mustard
1 clove crushed garlic
1 egg
1 lemon, juiced
freshly ground black pepper
1/4 cup grated Parmesan cheese
1 1/2 cups garlic croutons
1 (2 ounce) can anchovy filets
Clean lettuce thoroughly and wrap in paper towels to absorb moisture. Refrigerate until crisp, at least 1 hour or more.
In a bowl or jar combine oil, vinegar, Worcestershire sauce, salt, mustard, garlic and lemon juice. Whisk until well blended.
Coddle egg by heating 3 cups of water to boiling. Drop in egg (still in shell) and let stand for 1 minute. Remove egg from water and let cool. Once cooled crack open and whisk egg into dressing. Whisk until thoroughly blended.
Mash desired amount of anchovies and whisk them into the dressing. If desired set aside a few for garnish.
To assemble, place torn lettuce leaves in a large bowl. Pour dressing over the top and toss lightly. Add the grated cheese, garlic croutons and freshly ground pepper, toss. Serve immediately!

INGREDIENTS:
1 1/2 pounds beef sirloin steak
8 cups romaine lettuce, torn
into bite-size pieces
6 roma (plum) tomatoes, sliced
1/2 cup sliced fresh
mushrooms
3/4 cup crumbled blue cheese
1/4 cup walnuts
1/3 cup vegetable oil
3 tablespoons red wine vinegar
2 tablespoons lemon juice
1/2 teaspoon salt
1/8 teaspoon ground black
pepper
3 teaspoons Worcestershire
sauce
1/8 teaspoon liquid smoke
flavoring
DIRECTIONS:
1. Preheat oven on broiler setting. Broil steaks for 3 to 5 minutes per side, or to desired doneness. Allow to cool, then slice into bite-size pieces.

2 heads fresh broccoli
1 red onion
1/2 pound bacon
3/4 cup raisins 3/4 cup sliced almonds
1 cup mayonnaise

2 tablespoons white wine

DIRECTIONS:
1. Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
2. Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well.
3. To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.
