Here is a simple macaroni salad recipe.

Cook elbow macaroni per directions on box. Drain and quickly return to the pot and add 1 cup Zesty Italian salad dressing with 1TBSP salt and 1 tsp pepper. Mix this around and let the macaroni cool.

Meanwhile, mix the following: 1 cup grated carrots, 1 cup shredded sharp cheddar cheese, and 2 cups mayonaise,1/4 cup cider vinegar, 2 tsp sugar, 2 hard cooked eggs chopped small and 1 TBSP mustard. Mix together thoroughly and add to macaroni.

Ive had this recipe with a can of tuna and some frozen peas added or a package of salad shrimp. There are endless variations......enjoy!

Hi Rex, It is probably best for your wife to abstain from anything containing raw eggs at this time. This is as a precautionary measure just because they may contain salmonella etc. This is equally valid for the elderly or very young and if you are at present unwell.
If you are in good health and you are reasonably sure of your egg supplier/shop then you should be fine.

INGREDIENTS

* 1/2 cup fat-free sour cream
* 2 bacon strips, cooked and crumbled
* 1 green onion, chopped
* 1 teaspoon white wine vinegar or cider vinegar
* 1/2 teaspoon salt
* 1/8 teaspoon pepper
* 3 cups peas, fresh or frozen

DIRECTIONS

1. In a bowl, combine the first six ingredients; mix well. Add peas; toss to coat. Refrigerate for at least 1 hour before serving.

------------- Pea Salad with Creamy Dressing

INGREDIENTS

* 1 (10 ounce) package frozen peas, thawed
* 6 bacon strips, cooked and crumbled
* 1 (8 ounce) can sliced water chestnuts, drained
* 1/4 cup thinly sliced green onions
* DRESSING:
* 1/4 cup sour cream
* 4 teaspoons red wine vinegar
* 1 garlic clove, minced
* 1/2 teaspoon sugar
* 1/8 teaspoon salt

DIRECTIONS

1. In a bowl, combine peas, bacon, water chestnuts and onions; set aside. Combine all dressing ingredients until smooth; pour over salad and toss to coat. Refrigerate for at least 1 hour.

It's not too difficult. Make sure to cut the broccoli and cauliflower into very small florets. This is even better if it's made a few days in advance and allowed to marinate in the fridge. Hope you enjoy it as much as I do!
