Duke's Potato Salad

2 pounds red potatoes, boiled and cubed
3 hard-boiled eggs, chopped
1 cup Duke’s Mayonnaise
½ cup finely chopped red or sweet onion
½ cup chopped celery
½ cup sweet-pickle relish
½ cup finely chopped cooked bacon
1 (2.25-oz) can sliced black olives, drained (optional)
1 tablespoon prepared yellow mustard
1½ teaspoons sweet-pickle juice
1½ teapoons distilled white vinegar
¼ teaspoon salt
½ teaspoon ground black pepper

In a large bowl, combine all ingredients. Refrigerate for at least 1 hour before serving. Salad may be made ahead and refrigerated overnight.

Country Potato Salad

• 1 pound small red potatoes, unpeeled
• 1 green onion, sliced
• ¼ cup minced celery, optional
• 1 boiled egg, chopped
• 1/3 cup mayonnaise
• 1 Tbsp. yellow or Dijon mustard
• 1 Tbsp. finely chopped dill pickles or pickle relish
• Salt and pepper to taste

Place the potatoes in a large saucepan. Cover with cold water. Add some salt and place over medium-high heat. Bring to a boil and cook until the potatoes are tender, about 15 to 20 minutes. Drain and let the potatoes cool and then cut into bite-size pieces.
In a separate bowl, mix mayonnaise, mustard, pickles, salt, and pepper for dressing.
Toss potatoes, onion, celery, and egg in dressing. Serve chilled.

Traditional Deviled Eggs

7 large eggs, hard boiled and peeled
¼ cup mayonnaise
1 Tbsp sweet pickle relish
1 Tbsp. dill pickle relish
1 tsp prepared mustard
Salt and pepper, to taste
Paprika, for garnishing

Halve 7eggs lengthwise. Remove yolks and place in a small bowl. Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard. Add salt and pepper, to taste. Fill egg whites evenly with yolk mixture. Garnish with paprika. Store covered in refrigerator.

Egg Salad Tea Sandwiches

6 Eggs, hard boiled
3 Tbsp. Salt
3 Tbsp. Mayonnaise
2 Tbsp. Robert Rothschild Lemon Dill & Capers Sauce
1 tsp. White vinegar
2 tsp. Red onion, minced
Salt and pepper to taste
Cocktail bread, rye, wheat or white
Field greens, optional
Smoked salmon, optional
Ham or prosciutto, optional

Place eggs in a large saucepan or pot. Add enough water to cover the eggs completely. Add salt to the water. Bring the water to a boil and continue to boil for 6 minutes. Then remove the eggs from heat and let the eggs sit in hot water 12 minutes to cook. Drain the water and rinse under cool water to stop the eggs from cooking. Peel eggs when completely cooled. Roughly chop the peeled hard boiled eggs and place in a mixing bowl. Add mayonnaise, Lemon Dill & Capers Sauce, vinegar, red onion, salt and pepper to chopped eggs. Spread a layer of egg salad onto bottom half of tea sandwich bread and top with greens, smoked salmon or prosciutto or just leave plain! Top egg salad with remaining bread halves to finish tea sandwiches.

Well, I'm a kosher dill pickle girl myself, but:
2 eggs, @ 1 TBSP mayo, @ 2 tsp relish & mustard, salt & pepper
should do you. Oh, I like onions in mine, as well. And always start with about 1/2 the mayo you think you should use, then add some more if you think it is too dry once you've finished mixing everything in -- that way it won't be runny.

add some pepper, ham and potatoes, and it will be really good these 2 sound good!

I can do you a potato salad...

POTATO SALAD

Serves 2

INGREDIENTS

200g of new potatoes
4 spring onions
4 tablespoons of mayonnaise

METHOD

Clean the potatoes. Scrape off any eyes or shoots. Don't peel them unless they really need it.

Put the potatoes into a saucepan on a medium heat. Cover with water. Bring to the boil, then turn down the heat until it is just boiling (simmering). Boil for about 15 to 20 minutes.

While the potatoes are cooking, cut the top and bottom off the spring onions. Take off the outer leaf and discard any slimy bits. Wash them and chop them into very thin slices.

When the potatoes are cooked (see below), drain off the water. Cut the potatoes into halves or quarters, depending on their size.

Put the boiled potatoes, spring onions and mayonnaise into a bowl. Mix thoroughly.

ADDITIONS AND ALTERNATIVES

Use "designer" potatoes like Charlotte or Pink Fir Apple.

Replace half of the mayonnaise with salad cream.

Use home made mayonnaise.

Sprinkle with ¼ of a teaspoon of paprika.

TIPS

To test if the potatoes are done, stick a fork into one of them. If it is hard, give them a couple more minutes and test again. If it goes in easily, they are done just right. If it falls apart, they are overcooked.

Even if you intend to eat it cold, mix everything together while the potatoes are still warm. It helps the flavours to combine.

8 ounces cream cheese, softened
1/4 cup mayonnaise or Miracle Whip
1/2 teaspoon salt
1/8 teaspoon white pepper
1 tablespoon Dijon mustard
1/4 cup pickle relish
1/4 cup finely chopped celery
8 hard-boiled eggs, chopped
With a hand mixer beat together the first 5 ingrediants.
By hand stir in the relish and celery, then fold in eggs.
Keep refrigerated till time to use.
