Fresh Cranberry Salad
Randy Said:Does anyone have a recipe for a salad using sour cream, cream cheese, and fresh cranberries?
We Answered:This recipe uses mayonnaise instead of sour cream but hopefully you'll find it helpful:
Frozen Cranberry Salad
1 8 oz. pkg. cream cheese, softened
2 Tbs. mayonnaise
2 Tbs. granulated sugar
1 can whole cranberry sauce
1 8 oz. can crushed pineapple, drained
1 8 oz. container Cool Whip
1/2 C. chopped pecans
Soften cream cheese and mix with mayonnaise and sugar. Add one can whole cranberry sauce, one small can crushed pineapple that is drained completely and 1/2 C. chopped pecans. Stir in the Cool Whip, mixing completely. Place mixture in 13x9x2-inch pan and freeze. When ready to serve, just cut into squares. Can be made a day ahead to save time. Keep refrigerated.

Norman Said:Exactly how do you make that cranberry stuff at Thanksgiving?
We Answered:It's sauce, and heres my recipe
12 oz fresh or frozen cranberries
Pinch of salt
Combine ingredients on the stove stirring on at a medium heat. Bring to boil stirring constantly. Cranberries will pop, thereby thickening the sauce. Once the sauce has reached desired consistency, remove from heat.
I substitue splenda for a diabetic husband and it works great that way too
