The ingredients in most greek salad dressings are:Olive oil
Vinegar and/or Lemon Juice
Dried Oregano, preferable greek
Salt & Pepper to taste
My only other suggestion would be to check out the ingredients on Costco's Greek Salad, eliminate the actual salad and preservative ingredients and you should wind up with the salad ingredients.

For pasta salad, if you have like Wishbone Italian Dressing (or anything like that) it would work for pasta salad. If you have any bags of frozen veggies like broccoli, cauliflower, or carrots, those all work great for pasta salad.And, if you want to still make a potato salad without mayo, look up a recipe for a German Potato Salad - you might have the ingredients for that.
