Taco Salad Recipe

spread cream cheese in a glass dish evenly (1 or 2 blocks depending on how big the dish is)
sprinkle salsa (sometimes i drain the salsa because i dont like the chunks)
sprinkle 1 lb taco meat with seasoning (we always use leftover taco meat!)
sprinkle shredded cheese on top (mexican style is best)
put some olives too
you can also use refried beans but im not sure if you like those
if you do put that down before the cream cheese
and you can use avacado but i dont like that
serve with tortilla chips

1/2 pound lean ground beef
3 cloves garlic, minced
1 can (15 ounces) Ro*Tel Dark Red Kidney Beans, drained
3/4 cup frozen whole kernel corn
8 ounces RosaritaÂ® Taco Sauce
1 tablespoon GebhardtÂ® Chili Powder
1 small head iceberg lettuce, torn into pieces
2 medium tomatoes, chopped
1 large green sweet pepper, chopped
3/4 cup shredded reduced-fat sharp cheddar cheese, (3 ounces)
4 green onions, thinly sliced
PAMÂ® No-Stick Cooking Spray
6 (10-inch) flour tortillas
1/3 cup canned tomatillos, rinsed and drained, finely chopped
1/2 small avocado, peeled, chopped (1/2 cup)
2 tablespoons chopped canned green chili peppers
1/2 teaspoon garlic salt
Cook beef and garlic in medium skillet until beef is brown. If necessary, drain off fat.
Stir in beans, corn, taco sauce, and chili powder. Heat to boiling; reduce heat. Cover and simmer 10 minutes.
In large bowl, mix lettuce, tomatoes, pepper, cheese and onions.
To serve, divide lettuce mixture among Tortilla Cups (see below). Top each with some beef mixture; top with some Tomatillo Guacamole (see below).
Preheat oven to 350F.
Spray cooking spray onto one side of each tortilla. Then coat 6 small oven-safe bowls or 16-oz individual casseroles with cooking spray. Press tortillas, coated sides up. into casseroles. Place a ball of foil in each tortilla cup to help hold its shape.
Bake about 9 minutes or until light brown. Remove foil. Cool; remove from bowls. If desired, cups can be made ahead and stored in an airtight container for up to five days.
Tomatillo Guacamole (makes about 3/4 cup)
Combine tomatillos, avocado, chili peppers, and garlic salt in small mixing bowl. Cover and chill up to 24 hours.
Yield: 6 servings

3 tb Cider vinegar
2 tb Fresh lime or lemon juice
2 tb Oil
1 clove Garlic, pressed
1 tb Sugar
1/4 tsp Salt
1 cup Shredded lettuce
1 cup Cooked, shredded chicken
1 Large tomato, chopped
1 cup Grated Cheddar cheese
1/4 cup Sliced black olives
1 Sliced avocado
Mix vinegar, lime juice, oil, garlic, sugar and salt together until sugar dissolves. Put lettuce and tomato in large bowl and toss with dressing. Arrange dressed lettuce and tomato on four plates, top with cooked chicken, cheese, olives, avocado, salsa, sour cream, and tortilla chips.

We Answered:Ground beef - browned and drained (seasoned with taco seasoning
Lettuce - chopped
Onion - diced
Tomatoes - diced or quartered
Shredded cheddar cheese
Nacho flavored doritos
Thousand Island dressing
Kidney beans - 1- 2 cans (drained)
It really doesn;t matter on how you layer this salad, just make sure you put the Thousand Island dressing on last and shake all the contents up really good in a big bowl.
You can pretty much add or subtract anything to your own taste. (black olives, green onions, etc)
It has always been a winner when I have taken it places.

We Answered:You take ground beef, cook until brown mix in the taco bell seasoning, cook until done, then use the nacho cheese doritos, for your chips, and top with, lettuce, mexican shreaded cheese, onions, tomatoes, salsa and or hot sauce- I like the old el paso or taco bell brand, and you can even use refried beans. I love this recipe. It is really simple and tastes great.
