Citrus Salmon Recipe

Citrus Salmon Recipe

Felicia Said:

What can I have for my breakfasts that doesn't include cereals, milk, wheat, bread/toast, & fried food please?

We Answered:

You might begin by substituting rice for your wheat products. Then take a look at soy. There are some great breakfast products that are made from soy, such as sausages, burgers etc. Double check the wheat factor though. Instead of traditional dairy, look for soy substitutes or even rice milk substitutes (and, by the way, yogurt is dairy!!!) Here are some ideas:

1. Banana peanut butter smoothie: 1 ripe banana, 1 egg, 3 T peanut butter, 1 cup soy milk, 1/4 cup honey, ice cubes. Blend and enjoy!
2. Peanut butter and banana grilled sandwiches: on wheat free bread, spread peanut butter and top with bananas. Grill over medium heat until bread is crisp on both sides.
3. Virgin Mary Smoothie: Spicy tomato juice, a dash of worcestershire sauce, horseradish, carrots, celery, lime juice, ice. Blend and enjoy.
4. Hummus and rice crackers
5. Soup: lentil sausage, white bean and ham, beef barley
6. Corn tortilla quesadillas with Morningstar crumbles
7. Cinnamon toast (wheat free bread)
8. Tuna, mayonaise, lemon pepper, minced onion, dill pickles, celery, on green pepper "spoons".
9. Pasta tossed with sauteed kielbasa, red peppers, onion, and parmesan substitute or goat cheese.
10. Sauteed chicken, artichokes, goat cheese, olives on yellow rice.

What are some good salmon recipes for someone who does not like the taste of "salmon"?

Cedar Planked Salmon
Ingredients
3 (12 inch) untreated cedar planks
1/3 cup vegetable oil
1 1/2 tablespoons rice vinegar
1 teaspoon sesame oil
1/3 cup soy sauce
1/4 cup chopped green onions
1 tablespoon grated fresh ginger root
1 teaspoon minced garlic
2 (2 pound) salmon fillets, skin removed
Directions
1.Soak the cedar planks for at least 1 hour in warm water. Soak longer if you have time.
2.In a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.
3.Preheat an outdoor grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
4.Place the salmon fillets onto the planks and discard the marinade. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.

Smoked Salmon Sushi Roll
Ingredients
2 cups Japanese sushi rice
6 tablespoons rice wine vinegar
6 sheets nori (dry seaweed)
1 avocado - peeled, pitted and sliced
1 cucumber, peeled and sliced
8 ounces smoked salmon, cut into long strips
2 tablespoons wasabi paste
Directions
1.Soak rice for 4 hours. Drain rice and cook in a rice cooker with 2 cups of water. Rice must be slightly dry as vinegar will be added later.
2.Immediately after rice is cooked, mix in 6 tablespoons rice vinegar to the hot rice. Spread rice on a plate until completely cool.
3.Place 1 sheet of seaweed on bamboo mat, press a thin layer of cool rice on the seaweed. Leave at least 1/2 inch top and bottom edge of the seaweed uncovered. This is for easier sealing later. Dot some wasabi on the rice. Arrange cucumber, avocado and smoked salmon to the rice. Position them about 1 inch away from the bottom edge of the seaweed.
4.Slightly wet the top edge of the seaweed. Roll from bottom to the top edge with the help of the bamboo mat tightly. Cut roll into 8 equal pieces and serve. Repeat for other rolls.

2 teaspoons paprika
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound salmon fillet, skin removed
Directions
1.Heat a non-stick skillet, add pine nuts and stir until toasty, about 5 minutes. In a large bowl, place all salad ingredients (reserve half of the cilantro and half of the pine nuts for garnish).

3.In a bowl, combine cumin, paprika, salt and pepper. Cut salmon in 8 strips and coat with spices. Grill (or sear in a non-stick skillet brushed with canola oil) until crusty.

Geraldine Said:

Where can I buy sea salt?

We Answered:

Most grocery stores have it. It's usually right next to the table and rock salt on the bottom shelves.

Table salt is mined from underground salt deposits, and includes a small portion of calcium silicate, an anti-caking agent added to prevent clumping. It possesses very fine crystals and a sharp taste. Because of its fine grain a single teaspoon of table salt contains more salt than a tablespoon of kosher or sea salt.

Sea salt is harvested from evaporated seawater and receives little or no processing, leaving in tact the minerals from the water it came from. These minerals flavor and color the salt slightly. However, because these salts often come at a dear price, it is worth keeping in mind that they lose their unique flavor when cooked or dissolved.

Kosher salt takes its name from its use in the koshering process. It contains no preservatives and can be derived from either seawater or underground sources. Aside from being a great salt to keep within arm's reach when you are cooking, it is particularly useful in preserving, because its large crystals draw moisture out of meats and other foods more effectively than other salts.
