(Don't mix baking powder and juice and add until you are ready to start cooking the patties, otherwise it will become flat).
Form into small patties and fry until golden brown (about 5 minutes) in hot crisco.
Serve with tartar sauce (optional).

It's going to be tough to do this because canned salmon is already cooked to death right out of the can.If you have to use canned salmon, your best bet is to use a simple chowder recipe putting together all the ingredients except the salmon and then add the salmon just before you eat it. Reheating any leftovers is going to be problematic as well unless you don't mind overcooked fish.
Ingredients:
1 lb canned salmon
4 carrots, cut up small
2 large potatoes, diced
1 medium onion, chopped
1 (12 oz) can evaporated milk or 12 oz heavy cream
1 stick butter
Cornstarch
1 teaspoon salt or to taste
Put 4 cups of water and salt and add the vegetables and cook until tender.
Add evaporated milk, stick of butter and season to taste. (Add a touch of garlic powder and black pepper, if desire.)
After it is finished mix cornstarch with cold water and stir it into the soup to thicken it. The amount of cornstarch depend on what thickness you want.
Then add the canned salmon and gently stir until the salmon is heated through.

* 3 pounds (1.4 kg) salmon or trout (fillet or whole)
* 3 tablespoons (45 g) butter

* 1 bay leaf

* 1/4 cup (60 mL) dry white wine
* 1/2 lemon (juice only)

How to cook Oven Baked Salmon or Trout:
* Preheat oven to 350°F (180°C).
* Melt butter brown together minced onion and shallots, chopped carrot, bay leaf and thyme, uncovered, for 4 minutes.
* Salt, pepper and sprinkle with fennel seeds.
* Sprinkle with water, dry white wine and lemon juice add parsley sprig.
* Simmer for 5 minutes.
* Reserve.
* Rinse pat fish dry.
* Arrange fish onto the center of a sheet of aluminum foil seal, but not too tight, shaping a pocket.
* Sprinkle onion mixture over fish.
* Seal and lay pocket onto a shallow baking dish.
* Bake into preheated oven, 15 minutes per pound (454 g).
* Serve, along with lemon segments.

SALMON PATTIES
1 14. 75 oz can of traditional style salmon
1/2 cup all-purpose flour
2 eggs beaten
salt and pepper to taste
Drain salmon. Pour into bowl and flake it with a fork. Add beaten eggs, flour, salt and pepper. Mix thoroughly. Make into small patties.
In a skillet, heat one inch of vegetable oil. Fry patties on each side until brown. Drain on paper towels.
Serve warm with tartar sauce or dip in ranch dressing

SALMON PATTIES
1 can pink or red salmon
1 egg
Cracker crumbs (14 or 16) to consistency of making patties
Add 1/2 teaspoon of vinegar or lemon juice. Bake patties and fry in skillet to which has been added 2 or 3 tablespoon shortening. Put salmon in bowl, add eggs, beat, vinegar and cracker crumbs, stir all together make patties.

SHRIMP (CAMARONE) PATTIES
1 dozen eggs
1 package ground shrimp powder
1 tablespoon garlic powder
1 teaspoon onion powder
oil for frying
Separate egg yolks from eggs whites into two different bowls. In the bowl of an electric mixer, beat egg whites until they have soft peaks.
Beat egg yolks well. Stir in garlic powder, onion powder and shrimp powder, mixing well.
Folk in egg whites gently, so as not to deflate.
In a skillet, heat 1/4" vegetable oil. Fry the shrimp mixture in the hot oil, dropping by tablespoons and flattening slightly with the back of the spoon into patties.
After several minutes, flip and cook second side until lightly browned on both sides.
OR
SHRIMP PATTIES
1 lb. fresh shrimp, cleaned and cut up
1 egg, beaten
3 level tbsp. flour
Salt and pepper to taste
Put cleaned shrimp on paper towel and dry off, then cut up. Add salt and pepper and beaten egg. Stir with fork. Add flour and stir. Make patties by hand and roll in flour. Fry in skillet with Crisco until light brown. Makes 7 or 8 patties.
OR
SHRIMP PATTIES
1 sm. can crab meat
1 sm. can shrimp
3 potatoes
1 sm. onion, diced
1 egg
Peel, boil and mash 3 potatoes. Add crab meat, shrimp, diced onion, and egg. Stir well to mix. Take a small handful; roll into ball and dip in flour and flatten into pancake shape. Fry until brown on each side.
