I cook fish on a plank often on my gas grill, just make sure you soak the plank for a few hours first, and put the heat on the lowest setting. I have a charcoal grill, and a propane one. Personally I like gas better than charcoal for plank grilling, it's more convenient, and still gives a good smokey cedar flavor.

Actually garlic powder is a substitute for fresh garlic. One clove should be enough. They vary in size so if they are very small use two, but chop the garlic very fine. An easy way is to smash the clove with the side of a wide heavy knife, and then rock sharp side of the knife over it until it is minced into very small pieces.

it seems to me that the point of the grill and ceder planks is to smoke the salmon as it cooks. therefore, if i were you i would use a roasting pan on a hot element.

Firstly, fashion a small bowl out of tinfoil and fill it with some ceder chips. Place this in the bottom of your roasting tray with a cooling rack over top (to sit the salmon on). Put the roasting dish on the hot element and wait for the chips to start smoking. Meanwhile, brush the salmon with the sauce. When the wood chips are smoking, place your salmon on the rack and cover with tinfoil. After around 15 mins or so (depending on the size of your salmon, check it after 10 but be careful of the escaping smoke) pull it out and serve with the remaining sauce as per the recipe.

If you want to skip the whole smoking element then it would be fine to bake it in the oven, i would brush the sauce over it at 2 minute intervals until the salmon is cooked to your liking to form a glaze. And again, serve with the sauce.

For lowfat* especially, check into all the things you can steam.

Salmon is particularly good that way, and you can add non-fat flavorings to it as well if you want.
You don't have to have a bamboo steamer (though that's one cool piece of equipment, especially for low-fat cooking), you can just make your own with plates, pots, etc.

*I assume low-fat is what you want because _most_ cholesterol (leading to "high-cholesterol" amounts in the blood) is actually made in the body from the fat in foods rather than just coming in a specific food.


You might also want to check out cooking fish (and poultry, etc) "en papillote" --that's the French term for cooking (actually steaming) something "in a pouch" (...the pouch can be made of aluminum foil, parchment paper, or some other things). Foods prepared that way come out delicious and perfectly cooked, and several foods can be cooked at the same time in one pouch too (e.g., salmon + flavorings + veggies, though the some things may need to be cut up smaller than others):

Yes...I think it's awesome...I have only had to soak a plank for 1/2 -1 hour.We made our own,or you can buy a plank at a building supply store.Just don't buy treated lumber.
You can also use hickory,applewood,cherry if you know someone who might share with you.
Be sure to oil the plank good before adding your fish.
I even just use garlic,lemon and dillweed with oil on the fish.

Cedar Plank Salmon

1 Red Cedar Plank
16 oz. Wild King Salmon Filet
2 oz. Walnut Oil
2 oz. Maple Syrup mixed with 2 oz. Whiskey
6 sprigs Herbs (Rosemary, Thyme)

Heat cedar board for 15 minutes at 400 degrees. Brush board with
walnut oil. Place salmon on board, place herb on top. Drizzle with
maple syrup mixture. Cook in oven at 400 degrees for 20-25 minutes.

(Incidentally, Chinook Salmon is some of the best you can buy. If
you are ever in Seattle, you can get a whole Chinook Salmon packed
on dry ice to bring home with you. Yum! ) Our salmon was delicious:-
)!! The recipe is the one that comes with the cedar grilling planks.
I do think you could use the recipe even if you don't have the cedar
planks. You would just end up with a slightly different flavor. You
could also use mesquite, hickory or some other soaked wood chips
when you grill your salmon but I think the cedar planks give a more
delicate flavor than mesquite or hickory chips. Even though there is
brown sugar in the recipe, it was not overly sweet. Overall, the
flavor was very delicate and did not overwhelm the taste of the
salmon, just enhanced it, I think.

Cedar Planked Salmon

2 Tbl. canola oil
1 Tbl. soy sauce
3 Tbl, choice of chardonay, bourbon, or whiskey (We used bourbon -
DH's choice)
1/2 tsp. ground ginger
1 Tbl. brown sugar
Freshly ground pepper to taste
2 lb. salmon fillet (We used 2, 6 oz. center-cut salmon fillets with
the skin on.)
1/2 tsp. freshly squeezed lemon juice

Combine all liquid ingredients in a bowl; reserve the lemon juice.
Blend and set the marinade aside.
Remove any pinbones from salmon. (Most often, your fish monger will
do this for you.) Leave whole or cut individual servings. Place into
a shallow dish, add marinade and turn to coat. Cover and let sit for
20 minutes.
Preheat plank, which you have previously soaked in water for at
least 20 minutes and as long as 4 hours. Carefully lift lid on grill
and place salmon, skin down, on plank. Return the lid and let hot-
smoke for 8 to 10 minutes or until done.
Glaze: Transfer marinade to a small sauce pan. Gently simmer on
stovetop until reduced by half. Remove from heat and add lemon
juice. Brush or drizzle on salmon before serving.
