I do have to say that that sounds like an interesting dish, but that's just me. If you're making something similar to Salmon Cakes, I would recommend a cous cous or rice pilaf dish. Otherwise (or in addition to) a nice green salad or steamed (not mushy) vegetable would be good. Just keep in mind that you want your side dish to compliment your main dish, not overpower it or add different flavors to the meal. If you need a dressing for the salad, make it with ginger to add to the theme.

You're the vegetarian. I'm surprised you couldn't give him some suggestions. What do YOU like for main vegetarian dishes? A good selection of vegetables, and nice salad would be nice. He should have considered something like a spinich lasagna with a meatless sauce instead of the salmon... to serve everyone instead of doing something different because there are vegetarieans. Or even a meatless Italian sauce with pasta and garlic bread and a salad for everyone. There are MANY nice non-meat dishes that could serve all tastes. Maybe he could make some sort of a rice dish that has vegetables in it. I would think he could have done some research to come up with something.

Pan-fried Salmon
Easy salmon fillets in less than 10 minutes.

step 1 Prep pan
Preheat a non-stick pan, spray it with canola oil, and add the spices of your choice. This layer of spice will adhere to the underside of your fish, avoiding the messy procedure of seasoning on the counter.

I used fresh ground black pepper and some cajun seasoning.

step 2 Prep and add fish
Rinse your salmon and pat it dry.

Holding the fish over the sink, lightly rub it down with a thin layer of cornstarch. Give your fish a gentle shake to remove any excess cornstarch; this is intended to be an extremely thin layer. The cornstarch will help seal moisture into your fish, and help form a slightly crispy exterior.

Drop it skin-side down in the pan and cook over medium-high heat.

step 3 Spray and season
Spray the top surface of the fish with the canola oil. This will ensure it has enough oil to prevent sticking when you flip it later, and will help spices stick to the surface.

Add the same spices that you originally added to the pan. I added black pepper and cajun seasoning, trying to get roughly the same ratio as I did in the pan.

step 4 Flip
Keep an eye on the thick end of the fillet to see how far through it's cooked. You want to flip the fish when it's slightly less than 1/3 of the way through the fish.

After flipping, watch until it has cooked slightly less than 1/3 of the way from the other side. The center will continue to cook after you remove the fish from the hot pan; if you wait until there's no pink left in the center the fish will overcook on the plate. Fish are delicate.

If you like, press the thick end up against the side of the pan to sear it before removing the fish.

step 5
Let the fish sit off the heat for 2-5 minutes to finish cooking and redistribute juices, then plate and serve quickly.

Serve with lemons and the side dishes of your choice.

Cajun Seasoning
1 box salt
3 T black pepper
2 T garlic powder
1 t onion powder
1 t nutmeg
2 T parsley flakes (crunched)
4 T red pepper (ground) (cayenne)
2 T chili powder

Combine all ingredients; store in an airtight container.

Creole Seasoning Blend
1 T salt
1 1/2 t garlic powder
1 1/2 t onion powder
1 1/2 t paprika
1 1/4 t dried thyme
1 t red pepper
3/4 t black pepper
3/4 t dried oregano
1/2 t ground bay leaves
1/4 t chili powder

Combine all ingredients; store in an airtight container.

Use with seafood, chicken, beef, or vegetables.
Yield: 1/4 cup.

Try a Moscato D'Asti... it's a bit sweet and bubbly like Asti Spumante, the sweet champagne made in Italy with moscato bianco grapes. It should compliment the hint of honey in the glaze, and will certainly add to the festive occasion! A good bottle should run you about $10 at BJs Wholesale Club. Not sure basic retail prices, as I only buy at discount stores. Happy Anniversary and Bon Appetit! ;-)

Ingredients

4 thick salmon steaks
2.5cm/1in piece root ginger, peeled and cut into small, very thin slices
2 large cloves garlic, peeled and cut into small, very thin slices
350g/12oz tomatoes, peeled and halved
1 fresh red chilli, de-seeded and sliced as finely as possible
1 small yellow pepper, de-seeded and thinly sliced
4-6 cardamom pods, roughly crushed
400ml/14fl oz tinned coconut milk
sea salt
2 limes, juice only
handful of fresh mint leaves, chopped


Put the fish steaks in a fairly shallow ovenproof dish with a lid, into which they fit quite closely.
Scatter the ginger, garlic, tomato, chilli and yellow pepper over and around the fish and the cardamom pods in between.
Empty the coconut milk into a separate bowl, add a good sprinkling of sea salt and gradually stir in the lime juice. Pour the mixture gently over and around the fish and cover the dish.
Preheat the oven to 150C/300F/Gas 2. Put the dish on the centre shelf and cook for 40-50 minutes, until the fish is lightly done. To discover this insert a small, sharp knife into the centre of one of the steaks - if the flesh is slightly darker pink in the centre it will be perfectly cooked. Remove from the oven.
Before serving scatter the mint leaves on top.

Parmesan-spinach orzo pilaf. Prepare 8 ounces orzo (rice-shaped pasta) according to package directions, omitting salt and fat. Add 3 ounces fresh baby spinach and 1 1/2 teaspoons bottled minced garlic; stir well to combine. Cover and let stand 4 minutes, stirring twice to slightly wilt spinach. Add 1/2 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper. Just before serving, stir in 1/4 cup grated fresh Parmesan cheese.

Pineapple chunks with chopped fresh mint.
