Smoked Salmon Pizza
This excellent and super simple recipe is great for entertaining a crowd.
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Ingredients:

* 6 (4") Boboli® pizza crusts
* 8 oz. pkg. cream cheese, softened
* 2 shallots, finely chopped
* 8 oz. thinly sliced smoked salmon
* 2 cups shredded Havarti cheese

Preparation:
Preheat oven to 400 degrees F. In small bowl, combine cream cheese and shallots and beat until combined. Spread some of this mixture over each of the six Boboli® crusts. Divide the salmon evenly between the six crusts and top with the Havarti cheese.

Bake at 400 degrees for 8-12 minutes until cheeses and soft and melted and just beginning to brown around the edges. Cut each pizza into 6 wedges. 36 pieces

Smoked Salmon Pizzas These individual pizzas made from toasted pita breads are a tasty way to finish up extra salmon in this swift snack Seafood lovers are sure to request it time and again.

Ingredients

* 2 pita breads (6 inches)
* 1/4 cup pizza sauce
* 1/4 pound smoked salmon or lox, chopped
* 1 small red onion, halved and thinly sliced
* 1 cup (4 ounces) shredded mozzarella cheese
* 1/4 teaspoon dried oregano

Directions

* Place pitas on an ungreased baking sheet. Top with pizza sauce, salmon, onion, cheese and oregano. Bake at 425° for 7-10 minutes or until cheese is melted. Yield: 2 servings.

400g (14oz) smoked salmon
220g (7½oz) fat free cottage cheese
2ml (½ tsp) paprika
2ml (½ tsp) lemon juice
15ml (1 tbsp) chopped fresh parsley
Salt and black pepper
2 celery stalk, chopped
Sprigs of parsley to garnish


Place the salmon in a bowl and mash. Add the cottage cheese and mix to combine. Add the chopped parsley, celery, lemon juice, paprika, salt and black pepper. Mix to combine.
Place in a serving bowl. Garnish with sprigs of parsley and chill until required

Escalloped Salmon

1 pound can Salmon
3 tablespoons Butter
1 cup Bread or cracker crumbs
3 tablespoons Flour
Salt & pepper to taste 2 1/2 cups Milk

Drain salmon; reserve juice. Melt butter, add flour, stirring until smooth. Add milk, stir until thickened, add salmon liquor. Season to taste. Flake salmon, add to sauce and place in greased bakin dish. Sprinkle with bread crumbs. Bake at 350 F. for abt. 20 minutes.

FETTUCINI WITH SMOKED SALMON

1 lb. fettucini (green if available)
1 oz. (2 tbsp.) butter
Half of a sm. onion
5 oz. smoked salmon
7 fl. oz. heavy cream
Black pepper

Melt the butter and cook the finely chopped onion until it is soft but has not changed color. Add half the smoked salmon, roughly chopped and the cream. Warm gently, then blend or process together with the onion until smooth. Cut the rest of the salmon into thin strips, using kitchen scissors.
Cook the pasta, according to package directions carefully to avoid over cooking. Drain the pasta and turn into a serving bowl. Add the cream and salmon sauce. Stir thoroughly and add a little freshly ground black pepper. Gently stir in the salmon strips and serve at once

Well, liquid smoke shouldn't be too hard to find. It's basically collected smoke, that's all.

You probably know that smoke is a vapour and holds a lot of woody flavour. You can actually catch all the smoke, and when it drips down, it comes together as liquid smoke which they can then sell to you in little bottles.

You can usually find liquid smoke near the BBQ sauces and other sauces in the grocery store. It usually comes in little bottles, because you don't use much. It's very strong.

In terms of making fake smoked salmon, if you add liquid smoke to the salmon, it won't taste a lot like smoked salmon. That's because smoked salmon is raw, and canned salmon is cooked. It will resemble it, in flavour, but the texture is nothing the same. Cooked salmon has a much firmer, dryer texture than raw salmon, which is moist with a fatty, smooth mouthfeel.
