Would halibut work in a fish pie instead of cod/haddock?

We Answered:

Of course! It has the same mild flavor as cod or haddock. It is not quite as fatty, but paired with a rich sauce that is typically used in a fish pie there will be little difference in taste ad texture. Plus knowing that you are using a higher quality of fish does make the dish that much more luxurious! My husband is the Executive Chef and co-owner of The Lobby on York, a fine dining steak and seafood restaurant. Plus we are recently in "Cooking with Canada's Best" cook book. Here is a link to his favorite fish supplier. They are very good! Cheers! :-)

Good recipes using canned salmon?

We Answered:

Usually when i buy a big load of canned salmon i make salmon patties!

You will need:
1 (14.75 ounce) can canned salmon
1 egg
1/2 cup self-rising flour
1 quart vegetable oil for frying

Directions:
In a medium bowl, combine salmon, egg, and flour; mix well. Form into patties.
Heat approximately 1/4 inch oil in a fry pan over medium-high heat. Fry patties in batches until browned, turning once. Drain on paper towels, and serve.

If you don't want to eat them plain just put them in a bun and eat them like a burger with ketchup, mustard, ect.

You can also make salad, try this recipe:

1 (8 ounce) package farfalle pasta
2 heads broccoli, separated into florets
2 carrots, peeled and chopped
1 cup olive oil
2 teaspoons soy sauce
3 tablespoons red wine vinegar
2 cloves garlic, pressed
3 tablespoons fresh lemon juice
salt and pepper to taste
10 ounces canned salmon, drained

Bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain.
Bring a separate large pot of water to a boil. Add the broccoli and carrots, and cook in the boiling water until tender, 2 to 3 minutes; drain.
Combine the olive oil, soy sauce, red wine vinegar, garlic, lemon juice, salt, and pepper in a sealable container; seal. Shake vigorously to make the dressing.
Toss together the drained pasta, drained vegetables, salmon, and dressing in a large bowl. Store in refrigerator up to 4 days

Hope this helps! Happy cooking
