I was searching the 'net make sure my facts were straight, and I found this. It's very succinct and just the information you're looking for:To freeze fresh shrimp, freeze shrimp raw, with shell on, and completely submerged in water! This prevents freezer burn and drying out, and retains flavor and texture. Use heavy-duty freezer bags or Tupperware or any container that will hold water without puncturing. Freeze in amounts that you plan to use for each meal. Raw headless shrimp in the shell maintain quality during freezing longer than frozen, cooked shrimp and are best if frozen at the peak of freshness. Frozen raw shrimp maintains quality for approximately 6-7 months though it can be kept longer, whereas home frozen cooked shrimp begin to lose quality after approximately one month.
To thaw shrimp, run frozen shrimp under cold running water until completely thawed or thaw shrimp in the refrigerator. Never thaw in hot water or at room temperature.

sauté in 1/2 cube of butter with a little garlic and onion when they're close to done i de-glaze the pan with some white wine, stirring and scraping the bottom to get all those flavourful bits unstuck,it's my wife's favorite.if you want to mix it up a little try adding a little herbs, i add a little parmesean to the sauce and serve over linguine or fettuccine with some good bread.Virginia Said:

Mine would be stuffed shrimp! MMMMMMMMBuy the jumbo shrimp and clean and devain them and butterfly them. Use a meat mallet, flat side, to make it thin, about 1/8". Spread some chive & onion cream cheese along with some roasted red peppers and roll it up. Dip it in an egg mixture and dredge it in bread crumbs. You can fry it or bake it. Your choice. It is AWESOME!!!!!!

SHRIMP CREOLE3 pounds peeled and deveined shrimp
1/2 cup butter or margarine
1/2 cup all-purpose flour
2 cups chopped onions
1 cup each chopped celery and chopped green peppers
1 tablespoon chopped garlic
3 cups shrimp or fish stock
1 can (15 ounces) tomato sauce
4 thin lemon slices
1 tablespoon brown sugar
1 tablespoon each thyme and basil
3 bay leaves
Salt and cayenne pepper to taste
1 cup each sliced green onions, including tops, and snipped fresh parsley
4 cups hot cooked rice
Sauté shrimp in butter in large skillet over medium-high heat 2 to 3 minutes; remove and set aside. Add flour to remaining butter in skillet; stir over medium heat until lightly browned. Stir in onions, celery, green peppers, and garlic; cook until they begin to turn transparent. Add stock, tomato sauce, lemon slices, sugar, thyme, basil, bay leaves, salt and cayenne; simmer about 10 minutes. Stir in green onions, parsley, and reserved shrimp; cook 5 minutes longer. Serve over hot rice. Makes eight servings.
