Crawdads are scavengers and will eat almost anything that is available. I keep 5 different kinds of shrimp, some as large as crayfish and they find almost anything really tasty. Fish food is fine for them too. If you see a discarded outer shell of your cray, don't remove it, they will eat that too. It helps them recreate a new shell as they reabsorb the calcium in it...... talk about recycling, eh?Be careful though, they are escape artists and will crawl right out of your tank and onto the floor unless you have a good tight lid. I lost a beautiful red crayfish before I knew about their climbing ability. Never did find him, I figure he must have gone down the open drain in the basement floor by the wash tubs (about 20 feet from the tanks).
When I worked at a retail fish store, we had a tank with crawfish in it. We always gave them any dead fish that we picked out of the other tanks. There was always a fight when we dropped the carcass in for them. They really would be all over it as soon as it hit the bottom.

Here are two great seafood recipes- one for salmon and one for catfish, that are easy and really great. You should try about.com for seafood recipes- literally hundreds of them. Just think of combos, like shrimp and mexican or bass and cajun, and type those as a search- you will come up with lots of possibilities, enjoy!Catfish fillets are brushed with butter, coated with spices, and baked with tomatoes and chile peppers.
Ingredients
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried dill weed
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
4 (4 ounce) fillets catfish
1/4 cup margarine, melted
1 (10 ounce) can diced tomatoes with green chile peppers, partially drained
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
In a medium bowl, mix the cayenne pepper, garlic powder, dill weed, thyme, salt, and pepper.
Brush catfish fillets with the margarine, and dip into the spice mixture to coat.
Arrange catfish fillets in the prepared baking dish, and bake 30 minutes in the preheated oven. Top with the partially drained diced tomatoes with green chile peppers, and continue baking 10 minutes, until fish is easily flaked with a fork.
Blackened Salmon
6 salmon fillets, 1/2 to 3/4 inch thick, skinned
2-1/2 cup unsalted butter or margarine
1/2 cup fresh lemon juice
1-1/2 tsp cayenne pepper
1 tsp salt
2 tsp fresh ground black pepper
1 Tbsp dried thyme (do not use fresh - it will burn)
lemon wedges and parsley for garnish
trim off the thin edges of fillets as these would burn. pat dry and
refrigerate until ready to cook. the butter sauce adheres better to cold
fillets. in heavy 3-quart cast-iron frying pan over medium heat, melt
butter, add lemon juice, cayenne, salt, black pepper and thyme. stir to
blend; cool to lukewarm.
place an empty 10-inch cast-iron skillet over high heat until bottom has a
definite white haze and begins to smoke slightly. remove fish from
refrigerator; dip 1 fillet in warm butter sauce, coating well. place fish
in hot skillet, taking care that spits and spatters do not burn you. fish
will sear and cook almost immediately. turn fillet over; blacken other
side. repeat with remaining fillets.
reserve remaining butter sauce. as fillets are cooked, place them on
individual plates; keep warm. discard accumulated butter sauce in skillet
and charred bits between batches. when all fillets have been cooked, wipe
skillet clean and place empty skillet back on heat. add reserved butter
sauce; carefully swirl skillet 5 or 6 times to blacken butter. remove pan
from heat; drizzle butter over each fillet. garnish and serve hot.

Cornbread Shrimp Supreme3 thick slices bacon
4 eggs
1/4 cup milk
1/2 cup (1 stick) butter, melted, cooled
1 (6-ounce) package corn bread mix
6 dashes of hot sauce
1 medium onion, chopped
1 (10-ounce) package frozen chopped broccoli or spinach, thawed, drained
1 pound shrimp, cooked, peeled, deveined, coarsely chopped
2 cups shredded Cheddar cheese
Garnish: Chopped fresh parsley
Cook the bacon in a 10-inch cast-iron skillet until crisp. Remove the bacon to paper towels to drain. Crumble the bacon. Drain the skillet, reserving 1 tablespoon bacon drippings. Wipe the skillet clean with a paper towel. Return the reserved bacon drippings to the skillet. Place the skillet in a 375-degree oven.
Beat the eggs in a large bowl. Add the milk, butter, corn bread mix and hot sauce and mix well. Stir in the onion, broccoli, shrimp and 1-1/2 cups of the cheese. Pour into the hot skillet. Sprinkle with the remaining 1/2 cup cheese. Bake at 375 degrees for 30 to 35 minutes or until golden brown. Sprinkle with the crumbled bacon. Garnish with chopped fresh parsley.
SERVES: 8
Variation: You may use 1 pound ground sausage, browned and drained, instead of the shrimp.

2 medium-sized eggplants1 tablespoon lemon juice, concentrate
1 stick butter (1/4 lb)
1 large onion (chopped)
1 cup green onions (chopped)
1 medium bell pepper
3 cloves garlic
1 can Tony Chachere's Etouffee Sauce
1 pound peeled crawfish
Hot pepper to taste
2 cups cooked rice
Italian Bread Crumbs
Preheat oven to 350F. Peel and chop eggplant. Smother down in lemon
juice, butter, onion, bell pepper, green onions and garlic until
tender. Puree mixture in food processor. Add etouffee sauce and
crawfish. Simmer for 10 minutes. Season to taste. Add 2 cups cooked
rice. Mix well and pour into casserole dish. Sprinkle Italian Bread
crumbs on top and dot with butter. Bake at 350F for 30 minutes. Serve
as side dish or use to stuff peppers for main course.

Vegetable oil for frying
6 ounces (1 1/2 sticks) butter
4 cups onions, chopped
2 cups bell peppers, chopped
2 cups celery, chopped
2 teaspoons garlic, chopped
2 pounds medium shrimp, peeled and deveined
2 teaspoons salt
1/2 teaspoon cayenne pepper
1 cup plus 2 tablespoons flour
2 cups water
6 tablespoons chopped parsley
1/2 cup green onions, chopped
Essence, recipe follows
12 (1-inch) slices of eggplant
2 eggs beaten
2 cups dried, fine bread crumbs
1/2 cup grated Parmigiano-Reggiano cheese
Preheat the oil for frying. Melt the butter in a large skillet over medium heat. Add the onions, bell peppers, and celery and saute until soft and golden, about 10 minutes. Add the garlic and cook for 2 minutes. Add the shrimp, salt, and cayenne and cook for about 4 minutes, or until the shrimp turn pink Dissolve 2 tablespoons flour in the water and add to the shrimp mixture. Stir until the mixture thickens slightly. Reduce heat to medium-low and simmer for 6 to 8 minutes, stirring occasionally. Add the parsley and green onions. Stir and cook for 2 minutes more. Season the eggplant slices with Essence. Place the flour in a shallow bowl and season with Essence. In another bowl, season the egg wash with salt and pepper. In a third shallow bowl, season the bread crumbs with Essence. Dredge each slice of eggplant in the flour. Dip each slice in the egg wash, letting the excess drip off. Dredge each slice in the seasoned bread crumbs, coating each side completely. Carefully lay the eggplant slices in the hot oil. Fry the eggplant in batches and until golden brown. Remove the eggplant from the oil and drain on paper-lined plates. Season the eggplant with Essence. To serve place two to three fried eggplant pieces in the center of each plate. Spoon the Etouffee over the top and garnish with the cheese and green onions.
Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.
