London Broil
1 top quality flank steak, 2 to 2 1/2 pounds
1 can {3 oz.} broiled sliced mushrooms
1 can {5 oz} beef gravy
Score steak lightly in criss cross fashion, on both sides. Place flank steak on broiler rack in preheated broiler, 3 inches from heat. Broil 4 to 5 minutes on each side. Slice, diagonally, in thin slices across the grain of the meat. Add mushrooms, liquor and all to the gravy. Heat the gravy and pour some of it over the beef slices; serve the remainder separately. Makes 6 servings.

Broiled Chuck Steak
California Marinade
1/2 c cooking oil
1/4 c lemon juice
1 T paprika
2 T worcestershire sauce
dash tabasco sauce
2 T vinegar
2 t salt
2 t sugar
2 cloves garlic, crushed
Combine all ingredients and mix well. Makes 2 cups.
Select a chuck steak cut, about 1 inch thick. Marinate steak for at least 6 hours in California Marinade. Drain steak before broiling. Broil steak 3 inches from heat a total of 8 to 10 minutes for rare and 10 to 12 minutes for medium done.

Stuffed Flank Steak
2 T butter
1 medium sized onion, diced
1 egg, well beaten
3 T warm water
1/2 t salt
dash pepper
1/2 t poultry seasoning
3 c soft bread crumbs
1 flank steak, about 2 lbs.
2 t fat or cooking oil
1/2 c boiling water
Melt butter in a skillet. Add onion and cook until golden brown.Set aside. Put the egg, the 3 T warm water, salt, pepper, poultry seasoning, bread crumbs and onion into a bowl and mix well. Spread mixture over steak. Starting from the long side, roll meat up like a jelly roll; tie securely with twine. Set oven for moderately low, 325F. Melt fat in large skillet, over high heat. Brown rolled meat on all sides. Add additional salt and pepper, if desired. Add 1/2 c boiling water. Transfer to a baker and cover; bake1 1/2 hours or until meat is tender. Remove strings and cut in crosswise slices; arrange on a heated platter and garnish with radishes. Makes 6 servings.
