Orange Glazed Flank SteaksIngredients:
Marinade:
2/3 cup dry red wine
1/2 cup fresh orange juice
1/3 cup fresh lime juice
1/2 cup honey
1/4 cup cider vinegar
1/4 cup soy sauce, preferably Kikkoman
2 tablespoons mild olive oil
1 1/2 teaspoons minced garlic
1 teaspoon finely grated orange zest
1 teaspoon Tabasco sauce
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme crumbled
1/4 teaspoon freshly ground black pepper
2 beef flank steaks (2 pounds each)
Preparation:
To make the marinade, combine all the ingredients in a shallow 14 inch glass baking dish and stir until the honey is dissolved. Add the flank steaks and turn to coat with the marinade. Cover and refrigerate overnight.
Drain the steaks, reserving the marinade. Bring the steaks to room temperature
Meanwhile, place the marinade in a large skillet and bring to a boil over high heat. Continue boiling until the liquid is syrupy and mahogany colored, about 10 minutes Remove from the heat and let cool.
Prepare coals for grilling or preheat the broiler. Brush the glaze on both sides of the steaks and cook to medium-rare, about 4 minutes on each side.
Santa Fe Flank Steak
Ingredients:
1 flank steak, trimmed, a little over one pound
1/4 cup corn oil
1/4 cup fresh cilantro, minced
4 cloves of garlic, minced
2 tsp. salt
2 tsp. cumin
1 tsp. coriander
1 tsp. cayenne
1 tsp. fresh racked pepper
Procedure:
Once the flank steak in cleaned of any fat or sinew, place it in a zip lock style bag. The one gallon size.
Combine the marinade ingredients and pour over the steak and place in the refrigerator overnight.
When ready to cook, remove from the refrigerator and grill on a hot grill for 4 minutes per side to reach medium rare. Allow the steak to rest for 4-5 minutes once it comes off the grill.
Slice against the grain and serve immediately.

Flank steak recipee:4 lbs (2 large) flank steaks
Quick and easy marinade
1 bottle Kraft catalina dressing
aprox 1/3 bottle whorstichire sause
dash of garlic powder
salt and pepper to taste
score both sides of flank steakes with sharp knife in diagonal criss XXX cross patern carefull not to cut too deep about 1 inch apart. then cut each of the flank steakes into aprox 4 same size pieces, then put into zip lock bag with marinade ingredients
( should be a dark brown collor ), and marinade about 4 hours or overnite would be prefered. then cook on broiler pan under the broiler about 10 minutes total cooking time, turning over halfway thru cooking time the marinade will just slightly burnt in spots and carmalize. this is the way you want it., also works great on the BBQ grill especially with a little mesquite smoke.

Servings: 8 (5 1/2 oz. each)
4 lbs (2 large) flank steaks
FOR THE MARINADE (makes about 5 1/2 cups):
16 oz (2 cups) salad oil
8 oz (1 cup) soy sauce
8 oz (1 cup) Worcestershire sauce
1 cup brown sugar
1/2 cup sesame seeds
1 tsp garlic powder
1 tsp. ground ginger
1/4 tsp dry mustard
MARINADE INSTRUCTIONS:
Combine all ingredients for marinade; blend together well. Place flank steak into marinade. Use small enough container to allow flank steak to be completely covered by marinade. Marinade 24 hours minimum and not more than 4 days or flavor of the meat will be overpowered by marinade
COOKING INSTRUCTIONS:
Preheat grill to 360 degrees F for 1/2 hour.
Drain marinade from meat. Reserve marinade up to two weeks if needed.
Grill flank steak to medium rare. This will take approximately 10 minutes cooking time total. Hold cooked flank steak in warmer if necessary.
Transfer the steak to a cutting board and let rest for 5 minutes.
Slice cooked flank steak at 30 degree angle 1/8-inch thick slices: This is essential to keep flank steak tender.

1/2 cup cornmeal
1/4 cup all-purpose flour
1 teaspoon dried basil
1 teaspoon kosher salt, plus for seasoning
1/4 teaspoon cayenne
Freshly ground black pepper
2 large eggs, slightly beaten
Vegetable oil, for shallow frying
2 small zucchini, sliced into 1/8 to 1/4-inch thick coins
Drain large zucchini of its water before proceeding with recipe,. To drain, cut into slices and arrange them in layers in a collinder ; sprinkle each layer uniformly with coarse salt and let drain for 20 to 30 minutes in sink. Strain under cold water, pat dry and proceed with recipe.
Line a dish with paper towels and set aside.
Whisk the cornmeal, flour, basil, salt, cayenne, and pepper in a bowl.
Beat the eggs in another bowl.
Heat 1/4-inch vegetable oil in a skillet over medium heat until hot but not smoking.
Working in small batches, toss the zucchini coins in the eggs, then coat in the cornmeal mixture to cover completely.
Carefully drop the zucchini into the oil, and fry until golden brown, about 2 minutes on each side or until crisp.
Remove from the oil with a slotted spoon and place on the prepared plate.
Season with salt, cool slightly and serve.

Flank steak can be tricky. Marinades always help.Long braising German style will work fine, you won't ruin it.
I like to marinate it in citrus and red wine coat it with mexican fahita seasoning and fry it in a cast iron pan, and serve fajitas with it.

Funny thing about flank steak is years ago it was cheap because no one wanted it, but the past few years, cooks and chefs have learned that this is a very useful and tasty cut of beef.The best recommendation I can give is to marinate flank steak with an acidic based marinade. This will help break down the tough meat. Also the way you cut it is important. Thin cuts, at an angle, across the grain is the way to go.
Personally I use the flank steak to make homemade beef jerky. Yum!

Go Greek..!!!Season the steak with S&P, oregano, chopped onions & garlic, olive oil & lemon.
Put all of this in a big zip bag and let it marinate for about 3-5 hours.
Then, get the grill hot..
Cook the steak as you like it.
Serve it on pita bread with the tzatziki sauce, lettuce, tomatoes & onions.
Make a Mediterranean rice pilaf or couscous.
Also, serve a cool cucumber salad with sour cream & dill.
Finish off with fresh fruit & cookies - & don't forget the cocktails...

2 tbsp. grated Parmesan cheese
1 (1 to 1 1/2 lb.) flank steak, scored on both sides
2 tbsp. salad oil
SAUCE:
1 (3/4 oz.) pkg. brown gravy mix
1/4 c. dry red wine
2 tbsp. minced green onions
1/4 c. currant jelly
Combine bread stuffing with mushrooms and juice, butter, and cheese. Spread over flank steak; roll up like jelly roll. Fasten with skewers or string. Pour oil in slow cooking pot. Roll steak in oil, coating all sides.
FOR SAUCE: Prepare gravy mix according to package directions (no need to cook). Pour gravy, wine, and onions over meat. Cover, and cook on low 8-10 hours. Remove meat from pot, slice. Add jelly to sauce and stir until dissolved. Serve over meat.
