Check out this quick and easy Red Wine Butter Sauce!
Ingredients:
•½ Cup of Dry Red Wine (Merlot, Shiraz or Pinot)
•1 Teaspoon Black Peppercorns
•2 Tablespoons Of Finely Minced Shallots (Or Use Red Onions)
•2 Sticks Cold Unsalted Sweet Cream Butter
•Coarse Sea Salt
Directions:
Start by mixing the wine, peppercorns and shallots into a medium saucepan. Bring this mixture to a boil and reduce heat back to a medium low heat and allow to simmer for about 2 minutes.
Using a whisk, add small slices of your butter and allow each to almost melt prior to adding the next piece. Once all the butter is added, salt to your individual taste.
Note: Do not allow the sauce to get too hot or it will begin to break down.
Some like to strain the sauce into a clean container at this point if you don’t want the peppercorns and shallots to remain in the sauce. My wife prefers this method. She wants the flavor only.
Once the sauce is prepared, immediately add to your favorite grilled steak. Enjoy!!
Whiskey River Steak Sauce

Ingredients:
•1/4 Cup of Your Favorite Whiskey/Bourbon
•1/4 Cup Of Beef Broth
•1/4 Cup Light Cream
•3 Tablespoons Of Diced Sweet Onion
•3-4 Tablespoons of Sweet Cream Butter
•Salt To Taste
•Freshly Ground Black Pepper
Directions:
Start by using a medium sauce pan (or cast iron skillet) over a medium to low heat. Once pan starts to warm add a dollop of sweet cream butter and your diced onions. Allow the onions to begin to caramelize (this should take approximately 3-5 minutes. Don’t burn your onions!
Next slowly add your favorite Bourbon to the pan while continuously stirring. Once the Bourbon evaporates add your beef broth.
Next you want to add another tablespoon of your sweet cream butter. Once your butter melts, salt and pepper to taste. Let the mixture bubble or boil for 20 –30 seconds then reduce heat level to a low heat.
Finally you will want to add you cream while continuously whisking the mixture.
Remember if your sauce is not quite the consistency you want add more cream.
Chef’s Notes:
This sauce can be enjoyed on any steak. You can’t go wrong!

I recommend a light sprinkle of freshly ground black pepper and kosher or sea salt. Not too heavy on either. Now some folks insist that salting a steak prior to cooking will “dry it out†because the salt draws moisture from the steak. They are part correct and part incorrect. Salt draws moisture from the steak - but that moisture is composed of naturally occurring sugars and proteins - which when exposed to the high heat of searing (440F - 550F degrees) either on a grate or a cast iron skillet - will turn brown and form the crust that so many of us truly enjoy about a well prepared steak. Spanish Style Cube Steak2 tablespoons vegetable oil
2 (1/2 pound) beef cube steaks
salt and pepper to taste
1 cup (1 small) chopped onion
1 (16 ounce) can diced tomatoes
2 cups sliced fresh mushrooms (optional)
1 stalk celery, chopped (optional)
1/2 cup chopped green bell pepper
1 1/2 teaspoons dried oregano
1 bay leaf
Heat oil in a large Dutch oven over medium-high heat. Place steaks into the pot one at a time, quickly browning on each side. Remove steaks, and set aside. Add the onion to the pot, and cook over medium-low heat until wilted, about 3 minutes. Return the steaks to the pot, and add the tomatoes, mushrooms, celery and green pepper. Season with oregano and add the bay leaf.
Cover the pot, and cook over medium-low heat for about 1 1/2 hours, or until meat is fork tender.
Salsa Cube Steaks
1 pound beef cube steak
1/2 teaspoon ground cumin
salt and pepper to taste
1 green bell pepper, sliced
1 onion, sliced
1 (16 ounce) jar salsa
water as needed
Preheat oven to 375 degrees F (190 degrees C).
Place the steaks in a 9x13 inch baking dish and season with cumin and salt and pepper to taste. Arrange the pepper and onion over the meat and pour salsa over all, adding some water as needed to the bottom of the baking dish. Cover with foil.
Bake at 375 degrees F (190 degrees C) for 30 to 40 minutes.

This is so simple, and believe me he will love it.Take the steak and brush olive oil on both sides. Then pepper the steak and then shake on some salt. Don't do the salt first. Salt draws out moisture.
Get a skillet medium hot. And I mean a real cast iron skillet. Do not try to do this in a teflon pan.
Then, when you have the skillet hot, put that steak down. In three minutes turn that steak over. Give it two minutes on that side and you will have the most delicious bite of meat that you have ever eaten!
Keep it simple.

4 oz good seasons italian

2 habanero peppers dried
2 TB worcestershire sauce
1 TB red wine vinegar
1 ts pepper
1/4 ts salt
Make italian dressing, set aside. In a small saucepan
boil water and blanch (2 min.) the habaneros. Remove
and cut off stems. remove seeds from one pepper but
save seeds from one of the peppers. Place peppers in a
blender and add all other ingredients. Blend well.
Coat steaks generously. Marinate for 3-4 hours.

In small bowl, combine all ingredients. Place meat of choice in shallow dish
or pie plate and add marinade, turning to coat. Cover and refrigerate 4 hours
or overnight, turning occasionally. Meat and marinade also may be placed in a
heavy-duty sealable plastic bag and refrigerated.
Makes about 2 cups, enough to marinate 2 -2 1/2 pounds of beef.

basting sauce as the meat cooks on the grill.

fajitas then over and chill in refrigerator over night.
