Sicilian Stuffed Beef Bracciole Recipe

Ingredients
1 medium egg, whole beaten
1/2 lb thinly sliced prosciutto
3 tsps romano cheese, grated
1 dash black pepper, ground
2 tsps fresh parsley, sliced
1 dash salt
1 medium onion, sliced
1/2 lb genoa salami
3 hard-boiled eggs
3 tsps extra virgin olive oil
1/4 c breadcrumbs, soft
1 c red wine
1/4 lb peas, shelled
1 garlic clove, minced
1/4 lb ground beef
1 1/2 lbs beef, sliced Flank Steak works well
1 tsp tomato paste

Directions
Step #1 In a large bowl, peas, breadcrumbs, mix the garlic, parsley, beaten egg, ground beef, grated cheese, salt & pepper.
Step #2 Pound the beef or veal slice until it is 1/2 inch thick.
Step #3 Cover up the slice with salami & prosciutto & spoon on the ground beef mixture.
Step #4 Arrange the boiled eggs, end-to-end, along the short end of the beef or veal slice.
Step #5 Starting at the end, roll up the meat slice & secure it with twine.
Step #6 In a heavy skillet, Saute the onion in the oil over med-heat/flame until it is transparent.
Step #7 Add the meat roll to the skillet & brown it on all sides.
Step #8 Pour in the wine & cook over med-heat/flame until the wine evaporates.
Step #9 Dissolve the tomato paste in once c of boiling water & add it to the skillet.
Step #10 Cook slowly over low heat/flame until the meat roll is tnender & the sauce reduced, about 1 1/2 hrs.
Step #11 Add salt & pepper to tate.
Step #12 Let the Bracciole stand for a few mins.
Step #13 Serve it hot (with the sauce) or at about room temp in 1-inch thick slices.
Step #14 Each slice should have at its center a medallion of yellow egg yolk & a few peas.

In a pan in low heat add some cheap olive oil and chopped onions, let the onions get golden and add one tea cup of tomato pulp and one cup of water (wait till it starts boiling), and some red pepper paste to make it spicy and add some salt ( not a lot). Add chopped mushrooms and garlic ( chopped fresh or powder if you're lazy) and chopped parsley, if you want you can add one or two table spoons of white wine, let it simmer for 4 minutes, add one cup of cream, let it simmer for one minute. Taste and season to your choice, I would add pepper, ginger( just a bit), and oregano. In the meantime salt your steak, grill it, and when the sauce is done drop it inside the pan and let it simmer for a minute. For best results let your stake marinate in white wine and pepper for 12 hours, good wine, if it's not good enough to drink, it's not good enough to cook. Bon Apetit...

Gorgonzola Cream sauce is SO easy to make.

Just make a roux sauce (melt butter over a low heat in a pan, take off the heat and mix in flour). Put back on the heat, and add your cream (and a little milk, otherwise it will reduce and be too thick).

Add pieces of gorgonzola which will melt in to the creamy mixture and put generous amounts of cracked black pepper in there.

Once the cheese has melted, do a taste test to see how strong it is and you can add more if you wish.

Traditionally, amogio is made from a combination of an acid and oil along with garlic and other simple herbs and seasonings. Many use a large quantity of lemon juice, sometimes a little wine, and balance these flavors with olive oil.

White garlic amogio sauce

(Yield about 3/4 cup of sauce)

1 small to medium size bulb of garlic (12-14 cloves), peeled
1/3 cup white balsamic vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup olive oil

Step 1: Add the garlic, white balsamic vinegar, oregano, salt and pepper to a blender. Cover the blender jar with its lid and pulse on medium speed 3 or 4 times.

Step 2: With the blender on high speed, slowly add the olive oil to the mixture in the jar. When all the olive oil is added, allow the blender to run for an additional few seconds.

Step 3: Use the sauce as a marinade or brush on your favorite grilled meal (such as chicken) for a great finishing touch. The sauce may be continuously basted on your meat or vegetable while they are grilling. Extra sauce may be frozen for up to two weeks.

12 steak, ums
1 green pepper, cut in slices
1 small onion, cut in slices
1 can mushrooms
2 cups spaghetti sauce
1 tablespoon butter
3 cups shredded mozzarella cheese, cheeze
6 hoagie rolls

1. Melt the butter in a skillet.
2. Saute the green pepper, onion, and mushrooms in the melted butter.
3. Add spaghetti sauce until the mixture is well coated and warm.
4. In separate skillet, fry the Steak Ums.
5. Be sure to drain the grease.
6. Mix the Steak Ums and Sauce mixture together.
7. Spoon onto a hoagie roll and top with mozarella cheese.
8. Microwave to melt the cheese, if necessary.

FILLET STEAKS WITH SCALLION AND
RED-WINE SAUCE

1 scallion
2 beef fillet steaks, about 1 inch thick
Salt and pepper
2 tbsp. butter
1 tbsp. oil
6 tbsp. red wine

Slice scallion. Sprinkle steaks with salt and pepper. Heat a medium size frying pan over medium heat, add 1 tablespoon of the butter and the oil and beat until foamy. Add steaks and cook until well browned about 5 minutes. Turn and cook 5 minutes more for medium rare. Remove steaks from pan. Add scallion and cook over medium heat, stirring 1 minute. Add wine and cook, stirring 1 minute. Add wine and cook, stirring up brown bits from bottom of pan, until syrup about 1 minute off the heat, stir in remaining 1 tablespoon butter. Pour red wine sauce over the steaks and serve.
