Marinating the meat is the key to perfect London broil. Do not over cook the meat though.

London Broil

1 clove garlic, sliced
1 c. oil
½ c. cider vinegar
1 tsp. salt
¼ tsp. pepper
2 tsp. dry mustard
2 tsp. Worcestershire sauce
dash of cayenne
few drops of Tabasco sauce
2 ½ lb. lean flank steak, scored

Place garlic in large shallow pan. Blend remaining ingredients except meat. Place steak in pan; pour marinade over meat. Marinate overnight. Broil steak 2 to 3 inches below heat, allowing 3 to 4 minutes for each side. Carve diagonally across grain into thin slices.

Marinade may be refrigerated and used for other meats, fish, or poultry.

Yield: 4 Servings

London Broil is an inexpensive cut of meat that is exceptionally lean in it's interior but usually has a large fat cap. As with most very lean cuts it is a tough piece of meat when cooked quickly and cut up like most steaks. Yhe old adage tough cut cooks slow, tender cuts cook quick doesn't apply here however.

My favorite way to prepar a London Broil is to get the BBQ as hot as possible and cook the LB one one side then turn over and cook the other side. A very thick one can take 8 or 10 minutes per side.

Once cooked place on carving board and let rest for at least 5 minutes. Carve thinly and across the grain, reserve juices and pour over slices on serving plate.

Serve with green salad with tomatoe wedges, fresh Italian or French bread slices.

Ice Tea with Lemon, COLD Beer or a good merlot all work well with this.

Step 1A London broil can be made using either flank steak or round steak. I prefer flank steak.

Step 2Pour your favorite marinade into a bowl.

Step 3Marinate your steak in your refrigerator. Usually marinate your steak for around 2 to 3 hours. Grill the steak on high for around 3 minutes on each side. Turn the grill down to medium and continue cooking.

Step 4London broil is usually cooked to medium rare. This is where the inside of the steak is still pink. Average temperatures inside the steak are from 125 - 145 degrees F.

Step 5
Once you are done cooking the steak, do not begin cutting immediately. Wait at least 5 to 10 minutes. If you cut too soon, all of the juices will run out of the steak leaving you with a dry piece of meat.

THE NEXT DAY:

Preheat oven to 400°F.

Position steak about 6 inches from broiler. Broil until the top side is browned, flip, and pour some of the remaining marinade on the other side.

Do the same for the other side until it is cooked to your taste.

Score steak diagonally using slices about 1 cm thick.

I like to marinade them in what ever marinade you like (there are all kinds) Then cook it on the grill until it is med-rare. Then wrap it in foil and let it rest for 5 min. Then slice on an angle against the grain.
