Many restaurants get their meats from places like Costco, which were originally opened to serve business needs. These places have excellent meat and very high food safety standards (see link below).

One big advantage is that the chef can buy large primal cuts (rib-eye, new york steak, etc) and portion/trim it himself, to his requirements. The cost is also significantly less that standard retail.

I've had Omaha Steaks, and they are absolutely not worth the price they charge.

They are very easy to make yourself. Buy a thick ribeye steak or a small ribeye roast and ask your butcher to thin slice it for Philly cheesesteaks, sliced to 1/8 inch thickness or less. Beef ribeye is very expensive but you must use ribeye if you want a genuine Philly cheesesteak sandwich. You will also need some hoagie rolls, Cheez Whiz (or sliced american cheese if you don't like Cheez Whiz), provolone cheese, Vidalia onions or sweet yellow onions, green bell peppers, and sliced white button mushrooms (fresh or canned). In a skillet with a thin layer of oil, saute sliced onions, chopped bell peppers and sliced mushrooms until they are soft. Push them aside in the skillet when they are soft and then fry the sliced ribeye in the same oil and onion juices until the sliced ribeye is browned on each side. Just a couple minutes on each side is all it will take. Split the hoagie rolls open and spread on a little Cheez Whiz or lay on a slice of american cheese if you don't like Cheez Whiz. Then lay on the fried ribeye and top that with a slice of provolone cheese and top the provolone with the sauteed mushrooms, onions, and bell peppers. Juices will drip from a properly prepared Philly cheesesteak sandwich so don't forget the Philly lean when you eat it. Lean forward!

I would suggest the new Chargrilled Ribeye.It is cooked over an open flame, it seals in the juices and gives it a rich and robust flavor. It comes with 2 fresh made sides.
If that doesn't sound good, the filet is always a good choice.

Usually the meat is vacuum packed in a specially refrigerated box then delivered to your door overnight .

it's a fear thing , they can't stand the sight of the blood dripping off the end of they're fork. honestly though i believe if you blind folded them + served a nice med piece of quality cut meat , they would enjoy it until you removed the blind fold , then it would be right back to the same old " that is gross "

Lobel's is the best bar none no one can touch these guys. Very expensive. All of their beef is "Prime". When looking at the other purveyors look for "Prime". Others might sell "Premium" which means nothing. I have had great experience with Allen Brothers. They offer "Prime" and "choice". For the best treat buy their Filet Mignon Prime Complete Trim. They are not cheap. I have cooked these many times and they come out just like they look in the catalog. The secret is to use a cast iron skillet. Bring the filets to room temperature. Season with salt and pepper. Bring the skillet to high temp and sear on both sides. 15 seconds each. Place in preheated 400 degree oven for 8 minutes. Let rest for 5 minutes. Great steak. As far as Omaha Steaks go, they are a rip off. I managed one of their stores and quit because I got tired of selling garbage.
