Need to make restaurant style steak/prime rib dipping sauce.?

We Answered:

You could try this:

Au Jus Recipe - I created this easy Au Jus recipe because I wanted a delicious quick dipping sauce

1 (10-1/2 ounce) can French Onion soup
1 (10-1/2 ounce) can Beef Broth
1 can cold water
1/2 teaspoon turbinado sugar
2 teaspoons Worcestershire sauce
2 tbsp maple syrup OR honey
1/8 teaspoon salt

Combine ingredients in a saucepan, bring just to a boil, strain, discard onions and serve hot for dipping. Make 2 days ahead, cover and refrigerate.
Makes 3-1/2 cups

You can add in more honey/syrup if you want it sweeter. :)

Cooking prime rib steak?

The first answer appears to be more appropriate for a prime rib roast than a steak. I use a range top grill for steak (if your electric grill has enough square inches, use that; I never use the broiler in my oven but if you've had success with that, go ahead); my second choice would be the cast iron skillet, again if the surface area is sufficient for your steaks.

I heat my range top grill to the highest heat possible (check temp by sprinkling a few drops on the hot grill ... if it sizzles and evaporates instantly the grill is hot enough).

Prime rib steaks have a lot of flavor on their own ... and really don't need a marinade for tenderizing (generally). If you feel that you need a marinade, some of my friends swear by a good quality bottled Italian salad dressing (or any other salad dressing with wine vinegar and good olive oil). Otherwise, use sea salt, freshly ground black pepper and fresh minced garlic. My friend occasionally gives me a fresh batch of home made lemon pepper blend, which makes a really nice rub for grilling beef.

Remove your meat from the fridge as far in advance of cooking as you can tolerate. My friends the foodies tell me two hours is safe, the most I can bring myself to do is one hour. This way, you are not putting frigid meat on a hot grill which immediately lowers the grill temperature. You might get the meat nicely seared but you add to the cooking time while the grill reheats after the shock.

Time ... for steaks this thick, at least 7 minutes on the first side (for rare) ...

Enjoy your dinner and your guests.

How do restaurants cook their prime rib steak, they are always so tender and juicy.?

We Answered:

First off the prime Rib is not grilled it is usually baked and it is a "whole rib roast". The whole rib is rubbed with rosemary salt and pepper and baked whole for hours. Depending on the weight of the rib. The rib is then cut according to size and "doneness". Well-done is near the ends and medium and rare towards the middle. The steak is usually dipped in the Au-jus which is a rich season beef broth that is also served on the side, then plated. Prime refers to the grade of beef, prime has the most marble, results in a juicer and tastier steak. Rib steak is the particular cut, similar to the rib-eye.

Prime Rib Steak: What is the best way to warm up in the oven?

Don't, or you will ruin it by cooking it too much. It already is cooked to perfection....rare. Just put it between some bread and have a steak sandwich.
