Pan Seared Rib Eye


1 boneless rib eye steak, 1 1/2-inch thick
Canola oil to coat
Kosher salt and ground black pepper
Place 10 to 12-inch cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature.

When oven reaches temperature, remove pan and place on range over high heat. Coat steak lightly with oil and season both sides with a generous pinch of salt. Grind on black pepper to taste.

Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute to both of the oven turns.)

Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.

Yield: 1 to 2 servings

Cook Time: 5 minutes

INGREDIENTS:
1 tablespoon vegetable oil
4 (10 ounce) beef rib eye steaks
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, sliced
4 cloves garlic, minced
3 tablespoons fajita seasoning
1 lime, juiced

DIRECTIONS:
Heat the oil in a large skillet over high heat. Sear the steaks on both sides and set aside. In the same skillet over medium heat, saute the red bell pepper, green bell pepper, onion and garlic for 5 minutes, or to desired tenderness.
Sprinkle the steaks with the fajita seasoning and place them back in the skillet. Squeeze the lime juice over the steaks and bell peppers, reduce heat to low, cover and simmer for 30 minutes to 1 hour, turning steaks over occasionally. (Note: The longer it simmers, the more tender the meat gets.)

We Answered:

I cook rib eye steak in the oven all the time. However, I use the oven bags. I'm not sure if you have those or if you have a store near you like Wal Mart that carries them but the steak comes out TERRIFIC every time. I usually cut the steaks into the sizes I want ( usually in half ) and then season them ... put them into the bag .. and take a jar of homemade canned tomatoe=s ( or a can or two of diced tomatos ) and toss that into the bag too ... then I cook it on a low temp for several hours. The steaks come out soooo moist but well done. It's almost like roast .. you dont need a knife, it just falls apart.

I always prefer to grill or barbecue my steaks. I like it medium rare with a little pink showing. I put no seasoning on it until it is finished or near finished as seasoning before cooking can toughen up the meat. Sometimes I eat it without any seasoning at all for a nice change of pace. Other times I switch off different types of seasoning, but never use a steak sauce as that is too much additional taste as it over-powers the flavor of the steak.

Side dishes can be equally important. I prefer a nice salad with a small side of flavored pasta or dill with mashed potatoes and a nice red wine like red Zinfandel from Ridge, big and bold it compliments a steak so well. Leave the wine open for one to two hours before drinking it, and only slightly chilled to around 58 degrees or one hour in the fridge for the bottle or 10 to 15 minutes for one glass.

Then have a chocolate mousse cake for desert

The best way (I promise)
Get a cast iron skillet
Heat it over high until smoking hot
Rub rib eye with canola oil, not to much
Season it with kosher salt and fresh ground and toasted black pepper
Place steak on skillet, cook 2 min on one side, flip it and put it in 375F oven for 4 min for rare, 5 for med rare, 6 for med 7 for med will and 8 for well.
Allow to rest for 5 min covered before serving.

INGREDIENTS
3 cloves garlic, minced
2 tablespoons minced fresh ginger root
3/4 cup olive oil
1/3 cup rice vinegar
1/2 cup soy sauce
3 tablespoons honey
1/4 cup water

DIRECTIONS
In a 1 pint glass jar or larger, combine the garlic, ginger, olive oil, rice vinegar, soy sauce, honey, and water. Cover the jar with a tight fitting lid, and shake well. Remove lid, and heat jar in the microwave for 1 minute just to dissolve the honey. Let cool, and shake well before serving. Store covered in the refrigerator.
