Rib Eye Steak With Stilton Sauce

Amount Measure Ingredient -- Preparation Method

1/2 pound stilton -- softened (1 cup)
1 stick (1/2 cup) unsalted butter -- softened
1 1/2 cup dry white wine
4 teaspoons freeze-dried green peppercorns
1 cup heavy cream
4 teaspoons minced fresh parsley leaves
two 1-inch thick rib-eye steak (about 1
-- pound)

In a bowl cream together the cheese and butter until the mixture is
smooth. In a saucepan boil the wine with the peppercorns until it is
reduced about 1 tablespoon, add the cream, and boil the liquid until
it is reduced by half. Reduce the heat to moderately low, whisk the
cheese mixture, a little at a time, into the cream mixture, and whisk
in the parsley. Remove the pan from the heat and keep the sauce warm.

Preheat a grill pan. Pat steaks dry and season with salt and pepper.
Grill steaks 4 to 5 minutes on each side for medium rare. Let the
steak stand on a cutting board for 10 minutes. Slice thin and serve
with the Stilton sauce and watercress. Yield: 4 servings

4 Rib eye steaks; or top loin
- cut 3/4″ thick
2 tb Lime juice; fresh
8 Flour tortillas; 6″ size
1/4 c Colby cheese; shredded
1/4 c Jack cheese; shredded
1 c La Victoria Salsa;
- or homemade (NO PACE!)

Place steaks in utility dish and sprinkle with half the lime juice.
Turn steaks over and sprinkle with the remaining juice. Wrap
tortillas securely in heavy-duty aluminum foil. Place steaks on grid
over medium coals. Grill steaks 7 to 9 minutes for rare (140~F) to
medium (160~F), turning once. Place tortilla packet on outer edge of
grid and heat 5 minutes, turning once. Top each steak with an equal
amount of the cheeses. Serve with salsa and the tortillas.

Rib-Eye Steaks With Port And Mushroom Ragout
Amount Measure Ingredient -- Preparation Method

3 tablespoons butter
5 shallots -- sliced
1 pound mixed wild mushrooms* -- sliced
3/4 cup Tawny Port
3/4 cup canned beef broth
1 tablespoon Vegetable oil
4 rib rib eye steaks -about 8 oz each 3/4″ thick -- trimmed
1/4 cup Whipping cream
2 tablespoons Fresh tarragon OR -- chopped
2 teaspoons Dried tarragon
Fresh Italian parsley - chopped

*such as shiitake, portabella, oyster and crimini

Melt 2 tablespoons butter in large skillet over medium-high heat. Add shallots and saute‚ until tender, about 5 minutes. Add mushrooms and stir until beginning to soften, about 6 minutes. Add Port and broth and boil until liquid is syrupy, about 10 minutes. Melt remaining 1 tablespoon butter with oil in heavy large skillet over high heat. Sprinkle steaks with salt and pepper. Add to skillet and cook to desired doneness, about 3 minutes per side for medium rare. Transfer steaks to plates Bring mushrooms to simmer. Add cream and tarragon and boil until sauce thickens, about 2 minutes. Season with salt and pepper. Spoon mushrooms over steaks. Sprinkle with parsley and serve.

1 tb Olive oil
1 tb Garlic powder
1 tb Paprika
2 ts Thyme; dried ground
2 ts Oregano; dried ground
1 1/2 ts Pepper
1 ts Salt
1 ts Lemon pepper
1 ts Red pepper; ground
Orange slices; optional
Parsley sprigs; optional

Brush steaks lightly with olive oil. In a small bowl,
combine all seasonings. Sprinkle seasoning over
steaks and press in both sides. cover and chill for 1
hour. Grill steaks, turning once, over medium-hot
coals 14-18 minutes for rare; 18-22 minutes for
medium; 24-38 minutes for well done. Place on a warm
serving platter; cut across the grain into thick
slices. Garnish with orange slices and parsley if
desired.

Here's a very simple recipe. Onions, garlic, salt, black pepper and soysauce. Marinate it for a little bit. Deep fry it or bake it. When you bake put olive oil on top. All those recipes are good to make good meal. That's preatty much all you need for seasoning unless you want to be all fancy smancy.

Rib Eye & Vegetable Kabobs

3 beef rib eye steaks, cut 1 inch thick (approx. 2 pounds)
6 small (3 ounces each) red potatoes, halved
4 teaspoons minced fresh oregano leaves, divided
¼ teaspoon ground red pepper
2 medium yellow squash, cut into 1-inch pieces
3 tablespoons butter or margarine, melted
1 large clove garlic, crushed
Salt and pepper, as desired

Place potatoes in microwave-safe baking dish. Cover and microwave at HIGH 6 to 7 minutes or until barely fork tender, rearranging potatoes after 3 minutes. Meanwhile combine 2 teaspoons oregano and red pepper; sprinkle on both sides of beef rib eye steaks; reserve.

Alternately thread cooked potatoes and squash on six 8-inch skewers. Combine butter, garlic and remaining 2 teaspoons oregano; brush half of mixture over vegetables. Place steaks and kabobs on grid over medium coals*. Grill steaks 9 to 12 for rare to medium, turning once; grill kabobs 10 minutes, taming once and brushing with remaining butter mixture. Season steak and vegetables with salt and pepper to taste. 6 servings.

PANFRIED PEPPER RIB EYE STEAKS

2 large potatoes (about 1 1/4 lb.)
Olive oil
Salt
3 tbsp. grated Parmesan cheese
1 med. sized onion
2 beef rib eye steaks, each 1 inch thick
1 tsp. coarsely ground black pepper
1/4 c. balsamic or red wine vinegar

About 30 minutes before serving, preheat boiler if manufacturer directs. Slice unpeeled potatoes crosswise into 1/4 inch slices.
On ungreased jelly roll pan, arrange potatoes in a single layer, overlapping slightly if necessary. Drizzle potatoes with 2 tablespoons olive or salad oil and sprinkle with 1/2 teaspoon salt. Place jelly roll pan with potatoes in broiler about 4 inches from source of heat. Broil potatoes 10 minutes turning them once. Sprinkle potatoes with Parmesan cheese. Broil 3 to 4 minutes longer until cheese melts and potatoes brown.

While potatoes are broiling, dice onion. In 12 inch skillet over medium heat in 1 tablespoon hot olive or salad oil, cook onion until tender with slotted spoon, remove onion to bowl.

Sprinkle steaks with pepper and 1/2 teaspoon salt. In same skillet over medium high heat, in 1 tablespoon hot olive or salad oil, cook steaks until browned on both sides, about 8 minutes for rare or until of desired doneness. Place steaks on warm platter. Keep warm.

Reduce heat to medium, spoon off fat. Add vinegar and cook onion. Cook 1 minute, stirring to loosen brown bits on bottom of skillet. Spoon onion mixture over steaks. Arrange Parmesan potatoes around steaks. To serve cut each steak in half.


RIB EYE STEAK

6 rib eye steaks
3 tbsp. soy sauce
1 tbsp. minced garlic
1 tsp. ground cumin
1/8 tsp. pepper
1/2 c. butter
1 lb. fresh mushrooms, sliced
2 tbsp. white wine

Season steaks in soy sauce, garlic, cumin and pepper. Set aside. Saute mushrooms in 1/4 cup butter. Add wine and sprinkle with seasonings. Saute seasoned steaks in 1/4 cup butter (or grill) to desired doneness. Top with mushroom sauce!

You can do it in a frying pan but it may get smoky and messy, I would use a pan deep enough to hold any drippings and broil it. Be sure not to overcook! Rib eye is too good to eat other than medium rare!

Cook Time: 10 minutes
2 boneless rib-eye or strip steaks (about 3/4-inch thick), trimmed
2 tablespoons melted butter or oil
2 tablespoons McCormick Grill Mates Steak Rub
1 teaspoon Paprika
1/2 teaspoon Thyme Leaves
1/8 to 1/4 teaspoon Ground Red Pepper

1. Place large cast iron skillet (preferred) or other large heavy skillet (not nonstick) on high heat at least 5 minutes or until very hot. (See Test Kitchen Tips if using nonstick cookware.)

2. Mix Rub, paprika, thyme and red pepper in small bowl.

3. Brush each side of steaks with butter or oil. Generously season with Rub mixture.

4. Carefully place steaks in hot skillet. Cook 8 to 10 minutes or until desired doneness, turning once.

Test Kitchen Tips:
Directions for using nonstick cookware: Prepare steaks as directed above. Heat large nonstick skillet on medium heat 5 minutes. Cook as directed above. Increase cook time as needed for desired doneness.
Steaks can also be cooked directly on a preheated grill. Flavor and appearance will vary from the traditional skillet method.
