3 teaspoons chopped fresh parsley
6 (4 ounce) fillets salmon
salt and pepper to taste
6 lemon wedges
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.
Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.
Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges

I like to coat boneless skinless breasts with one of McCormick's Salt Free seasonings. You may need to pound the chicken if it's really thick at one end. Sear the chicken on high heat in a stainless steel pan for about 2 minutes a side. You want to carmelize the outside, but not burn it. Put the pan in a preheated 350 degree oven, cook 15-20 mins. This piece of chicken is very versatile.You can cut it up and put it in pasta with chopped fresh tomatoes, olives, and some olive oil.
You can dress your pasta with a regular pesto or sun dried tomato pesto instead of fresh tomatoes. Pesto is easy, put sun dried tomatoes, fresh parsley and basil and olive oil in a small food processor. Process it into a paste and put on the hot pasta and chicken. You can leave out the sun dried tomatoes and add pine nuts and parmesan instead if you want.
You can slice the chicken and serve it on a roll as a sandwich or you can eat it as is. I serve it with cous cous that I prepare with olive oil and the same spice that's on the chicken.

First off, you'll need butter, lemon or limes, garlic, and some pepper, and some Alm foil. Take the Alm Foil and coat it in a cooking spray. Make sure you have enough to wrap it shut. Place the salmon in the middle, and rub with the butter, this will help with the spices and taste. Next fine slice the lemon or limes into slim cirlce slices, and hold off to the side for now. The garlic can be crushed up and some left to place in later. Pepper and garlic the fish well, and apply the sliceson it. Now wrap it up in a pan and make sure the juices can move, you'll wish to flip it half way through. I use the oven at 350, and slowly bake it. Depending on how large you are cooking, make sure to cook well done. Again, half way through flip it over, and make sure the juices have coated the fish, don't pack the alm. foil tightly around it. Low Fat Tuna SteakBring something new to the table! White wine and dried basil bring a distinctly Sicilian taste to these luscious yet low-fat tuna steaks.
START TO FINISH: 45 minutes MAKES: 4 servings
1 pound fresh or frozen tuna steaks, 1 inch thick
1 small onion, chopped
2 cloves garlic, minced (1 teaspoon minced)
1 tablespoon extra-virgin olive oil
2 pounds roma tomatoes, seeded and chopped
1/2 cup dry white wine
1/4 to 1/2 teaspoon crushed red pepper
1/4 cup pitted ripe olives
2 tablespoons capers, rinsed and drained
2 tablespoons chopped fresh basil or 2 teaspoons dried basil, crushed
1 tablespoon chopped fresh mint or 1 teaspoon dried mint, crushed
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 tablespoon lemon juice
Thaw tuna, if frozen. Cut tuna into 4 portions, if necessary. Rinse tuna; pat dry with paper towels. Set aside.
In a large skillet, cook onion and garlic in hot oil over medium heat until onion is tender. Add tomatoes, wine, and crushed red pepper. Bring to boil; reduce heat. Simmer, uncovered, for 7 minutes. Add olives, capers, and dried basil and mint, if using; cook for 3 minutes more.
Sprinkle tuna with kosher salt and black pepper. Add tuna to skillet on top of tomato mixture. Cover and cook over medium heat for 5 minutes. Uncover and cook for 10 to 15 minutes more or until tuna flakes easily when tested with a fork and is slightly pink in the center.
Transfer tuna pieces to 4 serving plates. Spoon tomato mixture over tuna. Sprinkle with fresh basil and mint, if using. Drizzle with lemon juice.
For this recipe you will need:
2 pounds of salmon filets,
¾ cup of low or non-fat sour cream,
1/3 cup of low or non-fat mayonnaise,
2 tablespoons of all purpose flour,
2 tablespoons of lemon juice,
8 ounces of low or non-fat cream cheese,
1 minced clove of garlic,
1/3 cup of your favorite white wine,
salt, pepper, and paprika to taste.
Pre-heat your oven to 400 degrees Fahrenheit. Wash the salmon and pat it dry with a paper towel.
Use a non-stick spray such as Pam and spray your 9x13 inch baking dish. Place the salmon filets in the baking dish with the skin down in a single layer. In a medium size bowl, blend together the sour cream, mayonnaise, flour, lemon juice, cream cheese, garlic, and wine until smooth and well blended.
Now, with the back of a spoon spread the mixture over the salmon. Sprinkle with the salt, pepper and paprika to your liking. Do not cover and bake for around 20. You can use a meat thermometer to ensure your salmon is done and not overcooked. The internal temperature should be 140 degrees Fahrenheit. The salmon will still cook once you remove it from the heat source. Do not go by color alone.
You can also prepare low fat salmon recipes on your grill or barbeque and create some wonderful low fat sauces to enhance the flavor of your salmon.
A great sauce to serve along side grilled salmon is a low fat lemon dill sauce.
For this sauce you will need:
2 tablespoons of non-fat mayonnaise,
2 tablespoons of lemon juice,
1 teaspoon of Dijon mustard,
¾ teaspoon of dill weed,
salt and pepper to taste.
Blend together all ingredients with a wire whisk and refrigerate until ready to serve.
LOW FAT AND EGGLESS CHOCOLATE CAKE
3 c. flour
2 c. sugar
1 tsp. salt
2 tsp. baking soda
3/4 c. oil
1/3 c. cocoa
1 tsp. vanilla
2 tsp. vinegar
2 c. water
Mix all ingredients together well. Dump into a lightly greased 9 x 13 pan. Bake in 350 degree oven for 35 minutes. The recipe calls for dumping ingredients into a 9 x 13 pan and mixing well with a fork. I like it better mixing well in a bowl then dumping into the pan.

1. Preheat the oven to 450F. Cut four pieces of aluminum foil into
16″ squares.
2. Place each salmon steak on the prepared foil. Top each with 1
tablespoon of the parsley. Distribute the mushrooms over each, top
with 2 teaspoons of the lemon juice, and finally a sprinkling of
salt and pepper.
3. Seal the packages of foil shut tightly, place on a baking sheet,
and bake for about 15-20 minutes, or until the fish flakes. Cool
and chill for 6 hours or overnight.
4. To prepare the sauce: Chop the watercress, parsley, chives, and
dill in a food processor or blender. Place in a bowl, add the
remaining ingredients and stir together until well-mixed. Place in
a covered container and chill until ready to use.
5. If taking to a picnic, tote the packets as is and serve them with
the sauce on the side. If serving at home, remove the salmon from
the foil and serve on a platter surrounded by lemon wedges and
watercress leaves, with the sauce on the side.
Variation: Halibut steaks may be substituted for salmon.

Ingredients
1 whole salmon
1/3 cup green onion finely chopped
2 cups sliced mushrooms
1 teaspoon olive oil
2 cups fresh spinach chopped
